Name of Recipe:  Sweet and Sour Chicken

Number of People:  4

Ingredients:
3cm piece ginger peeled
2 cloves garlic peeled
1 onion peeled and halved
50g oil
1 tsp raw sugar
4 chicken thighs (approx 600g) cubed bite-size
1 tbsp soy sauce
225g tin pineapple pieces and juice
1 red capsicum chopped
1 roma tomato chopped

Preparation:
Add ginger, garlic and onion
Chop for 2 secs speed 6
Add oil
Sauté for 3 mins Varoma speed 1
Add sugar, chicken thigh cubes
Cook 4 mins Varoma Reverse speed 1
Add 1 tbsp soy sauce, pineapple pieces and juice, capsicum and tomato
Cook further 9 mins 100deg C on Reverse speed  1
Serve with rice or steamed vegetables.

Tips/Hints:
I've adapted the coconut chicken from Thermomix’s Budget Busters cookbook to work with ingredients from a sweet and sour pork recipe from the Woman’s Day “Cooking for Slimmers” cookbook, but keeping the chicken. The original recipe didn't suggest adding corn flour to thicken the sauce which suited me as I have always enjoyed the consistency of the meal.

Katcme - I made this tonight and followed the recipe to a T and ended up with shredded chicken. :/ Was it definitely speed 1 not soft speed?

Amy - after reading Katcme's comment, I cooked it on soft speed and it turned out perfectly.

Lisel -  the kids loved it.  I'd promised them sweet and sour noodles ages ago and done nothing.  This had the ingredients that best fitted my idea of what it should be like and it was a winner.  I added a julienned carrot and zucchini to up the veg content and served it over rice noodles.

tanm - Thanks for this recipe. I made it but I left out the ginger and garlic to keep my girls happy and I also added a carrot and zucchini. I found it a bit bland, probably from the lack of garlic and ginger but my girls liked it and ate it all up with no complaining, so that counts as a success in my book.

Thanks Thermomixer. I think Mrs T is not alone in preferring cooked food and sometimes I prefer cooked to raw soups. But it feels like there's something to eating more raw food. I'm the same with cauliflower - when I'm steaming some vegetables a fair amount of cauliflower gets munched rather than ending up in the Thermomix bowl.

After reading mixalot's post about the cream of cauliflower soup and with some cauliflower and carrots in my fridge, I decided to make this raw soup.

Name of Recipe: Cauliflower and Carrot Soup

Number of People: 1

Ingredients:
160g cauliflower
100g carrot
20g olive oil
20g lemon juice – half a lemon
375g water
Dash or two of shoyu sauce
Dribble of honey

Preparation:
The ingredients were processed in the Thermomix bowl for 20 seconds on speed 8. Then the mix was warmed to 37 degs C for 4 minutes on speed 1 and poured over some avocado chunks with some shallots added on top.

Tips/Hints:
I enjoyed eating this. The carrot is sweet enough to help produce a good result. Next time I'll try just the cauliflower, carrot and water poured over the avocado as I believe that this will taste nice without the extras.

I was disappointed with the cauliflower soup when I first made it. But when I tried again it was much better as I added more water along with some shoyu sauce and honey. Although probably more telling, I haven't made it since. The soup didn't have the right consistency but the extra water in the second attempt helped a lot. At the time I didn't register a bitter or tart taste, but since shoyu sauce and honey helped, I suspect the taste was an issue as well.

Andiesenji, can I ask what sort of blending tasks you consider the TM31 is a bit unwieldly for... I suspect it's for slightly larger batches of food. I have a VitaMix that I passed off to someone else in my family (after acquiring my TM31) but only as a boomerang that comes back to me if no longer being used.

Before buying my TM31 I used to use my Vitamix for blending foods and juices but now use the TM31 for those and lots of other tasks such as kneading bread and making pesto which it does very well.

... I never understood why I wasn't allowed fruit on the Candida diet... Then I read some information that supported my theory. It said ... that fruit only becomes an issue when it ferments in your stomach/gut, creating a sugar for the Candida to feed on...

Sim, I've read basically the same thing - but more specifically that excess fat in the diet is the problem. I've been reading about the 80/10/10 diet which is mainly fruit with a salad in the evening. The web site has an faq section that discusses candida http://foodnsport.com/faq.html?start=4

Half your luck to be getting this book from the library. Unfortunately my library doesn't have it and I've seen it on the shelf at a health food store for $70 which seems pretty steep. It looked like there were some interesting recipes in it, and that it would be cheaper on Amazon, so I'm thinking about getting it...

Tonight I've heated up some pumpkin soup a la Everyday Cooking along with half a nori sheet cut up small and 1 tbsp buckwheat soaked since this morning. It all came out really nicely and went well with some spelt bread also a la Everyday Cooking (Basic Bread).

Hey SunStone, you're doing really well to be 80-90% raw! I am impressed. I range between 50 to 75%...

As well as Rawlicious, Thermomix's Taste of Vegetarian cookbook has quite a few raw recipes in it. In fact, just inside the back cover of the Rawlicious booklet is a list of the raw recipes in Taste of Vegetarian. And a note at the bottom of that list says there are many other raw recipes in the Everyday cookbook and the Gluten Free, Wheat Free Cooking book. I have both the Vegetarian and Gluten/Wheat free cookbooks but haven't yet worked through them looking for raw recipes.

It would be great to know which raw cook books you've found. For me apart from Rawlicious, I've found the following ones:-

Two that I own:-
“12 Steps to Raw Foods” by Victoria Boutenko
“Rawsome” by Brigitte Mars

and two that I borrowed from the library:-
"The Raw Food Gourmet" by Gabrielle Chavez
"The Power House Diet" by Leslie Kenton

Plus I've found various web sites through Google. The best one I've found recently is Raw Sacramento Recipes at http://www.rawsacramento.net/recipes.htm  which has day to day recipes rather than the special occasion gourmet recipes. I'm currently working my way through these.

I'm also impressed with how well you're doing with the green juices. I haven't yet got them into a daily habit. But whenever I've tried them they have worked out well.
