I've just made this using 300g condensed milk and 100g Tenina's salted caramel sauce, tastes great! Hope the kids like it for sweets tonight!

Kids loved this tonight, had seconds and there is still heaps left. I grilled the bacon and chicken with some onion and boiled the pasta on the stove. Added some dried breadcrumbs on top for extra crunch also. Yummo!

Yes JD definitely an oldie, was surprised there wasn't one on here!

Regarding the icing sugar, I just use whatever I have, if there is icing sugar in the pantry I will use it, otherwise just mill up some raw sugar.

Ingredients
Base
150g condensed milk
100g butter
200g sweet biscuits (granita, milk arrowroot)
1 cup desiccated coconut
rind of one lemon


Icing
2 cups icing sugar
40g melted butter
juice of one lemon

Method
Grind biscuits on speed 6 for 10 seconds (very fine). Put biscuit crumbs in separate bowl. Add coconut and rind to this bowl.
In the thermomix melt butter and condensed milk together. Speed 2 90 degrees for approximately 3 minutes.
Add butter mix to biscuit mix and combine well. Press into slice tin and place in fridge to set for approximately 1-1.5 hrs.

Put all icing ingredients into bowl and combine well. You can melt the butter in the bowl before adding the other ingredients. Pour over base and place in fridge to set for a further half an hour.
Done! Slice into small squares to serve.

Denzelmum - Yum.  The frosting still melted everywhere after staying in the fridge overnight.  Decided to cut and freeze it.
This freezes really well.  Served this for grown ups on DS 2nd birthday party, a hit!

maddy - It will be runny because of the melted butter. Leave out the butter and just use lemon juice and icing sugar.

astarra - Mmmmmmmmmmmmmmmm This is great! I used this recipe for the instructions and the quantities from my old recipe (only difference is: 1/2C coconut instead of 1 C, 195gm condensed milk, and 120g butter. Oh and 250gm biscuits.) Miss 5 has just asked me to freeze some for her lunch boxes!! So thanx charabelle for the recipe and thanx denzelmum for letting us know it can be frozen!

Cakes / Lime and Coconut Loaf

125g butter
225g caster sugar
1 tsp lime rind
2 eggs
40ml lime juice (about two limes)
30g desiccated coconut
210g milk
225g SR Flour
Preheat oven to 170 degrees

Beat butter for 10 seconds on speed 5
Add sugar and rind beat for further 20 seconds on speed 5
With the thermo on speed 4 add the eggs one at a time through the lid until well mixed, approx 30 seconds
Add the remaining ingredients and mix with the aid of a spatula until well combined, approx 20 seconds on speed 3-4.
Pour into lined loaf tin and bake for 55 minutes.

VHJ - This is a lovely cake Charabelle. Soft, moist & very tasty. The kids haven't tried it yet and I'm not sure if they will like it but I certainly do. I drizzled a runny icing sugar & lime juice mix over the top & would be very happy serving this for an afternoon tea. Thank you very much for posting the recipe.

AmandaM - Made this for a work morning tea, and it is really lovely and light in texture.

Brunette - I doubled the coconut because I love it and added a crunchy lime drizzle topping. It is absolutely gorgeous. Thank you for the recipe.

KathD11 - it came out almost too crumbly (like you couldn't pick up a slice for fear it would fall apart in your hand) - but very moist and soft. Does anyone know what I did wrong?

Obbie -  I use lemon juice and coconut. I also have made this into mini muffin size as well. Freezes well.

Not a problem judy! I made mine with dark brown sugar (only because that is all the local shops had) and it is a lot darker than yours still.

Caramel, date and banana loaf

300g SR flour
1tsp bicarb soda
1 tsp mixed spice
125g dates
115g brown sugar
250g milk
2 eggs
1 cup banana

Chop dates for approx 10 seconds on speed 7
Add dry ingedients :-: speed 1 for 5 seconds
Add slightly beaten eggs, milk and bananas :-: speed 3 for 10 seconds
Pour into greased and lined loaf tin.
Bake for 45-50 mins at 180 degrees celcius.
Cool in tin
Try to stop it all being eaten at morning tea time!
PS I like to buy the bananas on special when they are going brown and place straight into freezer. Takes about an hour defrost.

JD - This has to be the easiest cake in the world to make.  Thanks for posting it charabelle, I love it.

cookie - I made this over the weekend and we love it. BUT I had something happen that has never happened to me before in 50+ years of baking. I actually think it is very funny, so I thought I would let you enjoy a laugh with me. The cake is cooked beautifully and the photo is self explanatory. The cake sort of erupted out the top a bit on one side. I think there must have been an air pocket and I didn't tap the tin as I often do. I find it really funny. It's starting to cave in a bit now as it doesn't have the two ends to support it.

JD - OMG, now that I think back Cookie, mine did exactly the same thing although I wasn't left with a hole in the middle and you couldn't even see where it erupted from.  Mine oozed out from the side of my tin measuring 21 x 11cm and I did think I would use the bigger one next time.  I had forgotten all about it - well, it was a whole week ago.

em - mmmm made this today with some half dead looking nanas, very nice with some butter on and warmed up a little!

ceejay - Just a tip... using fresh Medjool dates makes it quite difficult to mix... think I need to try dried ones next time. Thanks for the recipe! It was delicious and devoured by the kids!

AMH -  this has a good blend of flavours and moister than the banana, date and walnut bread in the EDC. Thanks for posting!

Frozzie -  this was lovely..only thing was I used rapadura instead of brown sugar and I preferred them in mini cakes than the large loaf but I made both...the only warning I would put on this is that when you mixed the dates then add the rest of the ingredients make sure that the dates are mixed in to the rest of the mixture and not stuck in the bottom of the bowl..luckily I noticed that a lot of it had stayed at the bottom of the bowl and mixed it in with the spatula..also I chopped up the banana in half slices about half a cm and they stayed in little bits through the cake which made it very nice...in any case thank you it is a lovely recipe.

Kerry o - I'm just trying this out now, mine is in the oven and oozing over the edges of the tin. Wish I read the comments below all the way to the bottom  - Doh! I also left out the dates...hope they weren't a must?
Success!  I brought it into work today for morning tea and it went down a treat, even had a few people ask for the recipe, I'm going to give this ago again tonight but with the dates, be interesting to see how much of a difference they make.  Today at work I forgot you were supposed to add dates so thought it wasn't very sweet although with a spread of butter it tasted lovely.

snappy - I made it as patty cake sized muffins - perfect for the school lunch box!  I also added Choc chips.  Kids and husband all love them.

Really faffa? This is my third DS and both DD were great sleepers! I put it down to a boy thing!

Sorry all it has been so long, have a 7mth old bub who has developed some sleep issues, as in he doesn't want to sleep!

I am just new to this forum, have had my thermo for almost 12 months now though and have visited this site looking for recipes for a while so thought I should join in!
