Just came across this thread
I am pretty sure that the original Worcestershire sauce had anchovies and tamarind in it
Anchovies add umami and complexity and tamarind flavour and sourness
Might have to experiment

  The steamy Orange Soy Chicken recipe out of the "Meat on the Menu" cookbook
It all is good except for the sauce when made from the marinade
It desperately needs some palm sugar ( or other sweetness ) to counteract the orange peel, orange juice, rice vinegar, soy sauce
There is not enough hoi sin to make a difference
Other than that it worked well
Chicken is moist
I also cooked rice and steamed vegetables at the same time
All in one
If the sauce was sweeter it would have masked the bitterness and would have been better balanced and more enjoyable
It certainly didn't lack flavour - as mentioned in another stream ( found later )

Hi
I'm Mark from Canberra and I have finally ordered my machine and can't wait to get started
I'm a food and wine fanatic
I can't wait to adapt a whole range of recipes
I waxed so lyrically ( obviously ) that my colleague who shares my office also bought one
Look forward to sharing recipes and ideas very sooooon........
