Better late then never ACHOOKWOMAN, I undertook a Masters of Nursing.
I am a dermatoscopist/dermatology nurse working in skin cancer medicine conducting examinations in an employee skin cancer screening program based in Perth I travel all over WA and occasionally work in SA and NT too.

I had to share this, it is so easy and delicious. I made it because I have my step daughters coming over the weekend and like to have interesting things for them.
P.S: I have been off the forum for a long time as I completed my master of Nursing, which also had me move from the farm to Perth city. This also meant I had little time to experiment with my beloved TM, it is so nice to be back to making yummy things again.  I hope you enjoy.

Makes 20 squares
• 1 cup almonds, soaked overnight, discard water
• 2 cups dates, soaked for a couple of hours (1 cup for topping)
• 1 cup of filtered water
• ½ cup carob powder
• 2 cups coconut meat or desiccated coconut

1. Add the soaked almonds, 1 cup of dates, filtered water and carob. Blend in a TM until smooth.
2. Mix in the coconut, then press the mix into a biscuit tray to about 2 cm thickness. Leave covered in the fridge for 2-3 hours to firm up.
3. For the topping: process the second cup of dates in TM with a little water until smooth like a cake icing and spread over the set mix. Sprinkle with some coconut or other nuts of your choice. Rest in the fridge, then cut into small squares to serve.
Nutrition info: This is heaven for your taste buds and your health. Full of fibre, calcium and magnesium plus fats that will promote a great immune response, a piece of this will become a firm favourite.

Thanks Judy Dawn, I went back to University and did a post grad then decided I would do my Masters.  So not much time in this house for anything else in the past three years.   But my TM is still being used everyday!!!!

Bootobethn, that really looks dangerous.  I bought a cute little woolies slow cooker today and made my first mini loaf, it didn't even have time to cool and we had demolished it.

I just love my thermomix - Today I have stewed Apricots, made apricot jam, lemon cordial and now I have spiced pear paste cooking.  I have to make relish this afternoon too.  My tomato plants are abundant and I have an abundant with tomatoes.

This was the most frustrating thing I have made in my TM so far. It took about 20 min for the lemon curd to thicken & then the meringue failed as well. Second batch of meringue worked after speaking with my consultant who said to scrap the heat during the whip process. It was flat though, but worked.
Merengue
Efjay I use 2 extra egg whites - at room temp, no extra sugar a Tbl of cream of tarter and just beat it for a long time, I don't make any extra effort with the bowl being cleaner dry ect.  Just beat it and beat it as you can see from my photos the meringue is think high and great.
Filling
I also add cornflour to my curd if it every looks like isn't thickening as much as I like.   I have made mini ones tooI really love the recipe.

I didn't have a demo I just bought a thermoserver type thing from eBay for $30, I even told the poor rep to just drop it to me at work.  Of course she insisted to do a demo, but I declined my sister in law had her thermomix already . My DH, DD and I where her 3 demo guests when the rep did the demo and the thought of that disgusting bean pasta still haunts me YUK!!!  the demo really didn't do the thermomix justice I cook lots and my food processor died so I replaced it with a thermomix. (I have had mine for 4 years and bought my daughter hers for her 18th birthday).

I steam my veggies most days, today I made pea and ham soup. Last week i made lemon meringue, cakes, scones.
Yesterday I made whole orange cake and blackberry jam I use the forum lots but mostly just convert my everyday recipes.  Endless!
I am a very 'old fashion' country cook mostly, my daughter makes lots of quirky jo's recipes.
I even blend up scraps for my chooks and worm cafe and i cook up veggies and meat for my dogs.

I haven't cooked in a saucepan on the stove top for 3 years - since having my Thermomix.  I cook everything in it, I sometimes think one is just not enough. My 19 yr old daughter moved out of home at 17 and I bought her one, she makes more creative things then me and went on her teacher placement for a month and the one thing she missed the most was her Thermomix.
Once you get started you will just wonder how you did things with out it!
