Absolutely that would work, or you could even just increase the Chia seeds by another tbs or so.

Starters and Snacks / Chia Protein Muesli Bars

Hi Everyone,
I put this recipe into another Food forum so I'd know how many calories per bar (96kcal).  I thought I may as well share with everyone!
Please note this only uses a little honey and the banana for sweetening.  You may wish to increase the honey or add some sugar if you prefer it sweeter.

Name of Recipe:  Chia Protein Muesli Bars
Number of People: Makes 16 Bars

Ingredients:

170g rolled oats
2 Tbs Flax Seed
2 Tbs Chia Seed
2 scoops protein powder (I used Vanilla, but would work with Chocolate also.  If you don't have any powder, I'm sure it would be fine to omit.)
70g mixed dried fruit
2 tablespoons natural-style nut butter
2 large eggs
2 medium banana
1 Tbs honey
1 tsp cinnamon

Preparation:

Heat oven to 180c, spray slice tin.

1:  Grind Flax Seed 10 seconds speed 10.  Add Chia seed, grind 15 sec speed 10.  Transfer to mixing bowl.
2:  Add to mixing bowl Oats, Protein Powder, dried fruit and cinnamon, stir to combine
3: To TM bowl add bananas, honey, nut butter, mix until combined speed 5, approx 20 sec, scrape down sides and mix again a few secs if required.  Add eggs, mix 10 sec speed 4.
4: Add banana mix to dry ingredients, stir until combined.
5:  Spread out in slice tin, use spatula to cut into 16 portions while still wet.
6:  Bake 15 min

I tried this for a dinner party, and to be honest it was quite a lot of work.  In total it took something like 3-4hrs to prepare all of the components, which I did a few days beforehand and put each component in a container in the fridge.  On the day I assembled in dessert glasses, then back in the fridge till time to eat.

The work was absolutely worth it, THIS DESSERT IS SO DELICIOUS!!!! ;D

The rich white choc mousse is really nicely paired with the tart curd, and the crumb gives a delicious crunchy texture.

It really is worth the effort, all of my guests practically licked the bowls clean, even the "non-dessert lovers".

Notes:

I could only get tinned passionfruit in syrup, so I reduced the amount of sugar even more than the recipe suggested.  I think if the curd is on the sour side on it's own it works better with the mousse, which is quite sweet.

I stopped and stirred the white choc every 10 min or so, as the mixture closer to the blades was caramelising faster than the outside.

I also subbed instant coffee for coffee beans, and it turned out fine.  I used a little less weight in instant coffee than noted for ground beans, not sure of the exact amounts.

It was so delicious I didn't have time to get a photo, sorry!

SO YUMMY!!!!!

Starters and Snacks / Re: Roasted Red Capsicum Dip
« on: January 02, 2012, 04:29:29 am »
I made this dip for New Years Eve, it was delicious, and friends were all raving about it!

I made a mistake though, and had it processing too high speed for too long, but I found that it made it quite nice, smooth and fluffy, rather than chunkier type hummus.

Also used capsicum from a jar I needed to finish off so it probably ended up with a little more oil than the recipe states.

Fantastic recipe, thank you!

Hi Jeninwa,

Here is a link to an online store, this is the one I bought, just a dollar or so more expensive.  A search for "dashi" brings up a few options.  Also, maybe with the Japanese writing it's hard to spot the packages in your local stores?  Maybe print out a pic and take it with you to check again?

I made the dust today, it really tastes like bacon!

I bought 60g of Hon Dashi for $6, and just made a half batch.  This is still quite a lot!

Was also surprised to see "MSG" staring out at me from the list of ingredients, but, it is Japanese stock and MSG is used like salt in Japanese households, maybe not such a surprise.  I suppose that's why it tastes so good  :P

Anyway, my reason for making it was to use as bacon flavour for Bacon Macarons with Maple Buttercream.

Had a false start first batch, I mixed in some of the Bacon powder into the macaronage, which caused it to not dry out well, then it spread and cracked in the oven.  2nd time I just sprinkled over the top when they came out of the oven,  The powder flavour is still quite stong, they taste delicious!

Introduce Yourself / Finally took the plunge!
« on: December 02, 2011, 07:59:04 pm »
Hello everyone,

I'm very glad to be posting here, because it means that 6 long years after I first saw a demo I finally have a Thermomix of my very own:)

I think it was the lurking on this forum for a while that finally made me do it, so thank you everyone!  No kids yet, so I couldn't use a busy mum who needs it excuse with my partner, I just put my foot down :P

Have had my magic machine for 2 months now, I think I'm now getting pretty comfortable with it and the way recipes can be converted.

I'm really interested in making more things from scratch and avoiding "packets" and all the additives and chemicals.  I would say I want to cook "healthier", but I'm feeling the very strong pull of delicious baked goods, custards and sauces, so that one may be a little difficult for a while yet  ;D

I even have my very first question about sugar syrup, off to post that one now!
