Bread / Re: Five Seed bread - replaces Cape Seed Bread in EDC book
« on: March 10, 2012, 01:01:09 pm »
I made the five seed bread today but with 200g spelt flour and 300g bakers' flour, otherwise exactly as per the recipe.  It worked very well and tasted great. I can't compare it to the EDC version with 500g bakers' flour because I haven't made that.

It's a 'heavy' bread though with all those seeds and very filling to eat.. I generally prefer a lighter loaf so am only likely to make this one occasionally.

PS I didn't use a loaf pan, just placed the shaped loaf onto a baking tray for the second rise and then into the oven.  The dough wasn't sticky & was very easy to shape.  For the first rise I just left it in the TMX bowl.

I had been a bit worried about not having a warm enough place for the dough to rise, but my stovetop - under the warmth of the rangehood's halogen lamps - turned out to be perfect.

I just did and it was my first ever attempt at making bread!!  Turned out very well as a loaf, I put about a tablespoon of linseeds in as well.

How nice is it to be able to eat hot fresh bread... there are some excellent bakeries near where I live and I'm a regular customer, but maybe not for much longer  ;D More in love with my TMX than ever  :D :D :D

Unreal. I'm now drinking the delicious lemon/parsley juice and have the quality problem of 'too much great food' in my fridge!!  I really shouldn't make anything more now until I've eaten or shared some of it ;-)  Haven't tried bread yet as my local supermarket only had bakers' flour in 5kg bags which seemed way too much.  I'll do the broccoli salad tomorrow morning to take to work for lunch.

Thank you all for your support & encouragement - it's great to be in contact with people who understand, and share, my enthusiasm.  I look forward to learning lots more from this forum and hopefully contributing too.  :D :D

About 1.5 days, thermoheaven  ;) :D. I will have to keep the raving in check with those around me who have been fairly sceptical so far.. so few people have even heard of this amazing gadget, including me until a few weeks ago!

Hi Cornish Cream, I made Bron's veggie stock concentrate first because someone commented it was nicer than the version in the EDC (it sounded nicer too!).  A bit scary using speed 10 and then temp 100 for the first dish, but it seemed to have worked well.  I haven't used the stock in anything yet because it was a hot day here so risotto or soup etc didn't appeal, but it'll be great to have it on hand.

Then I made chocolate custard which was amazing, although I think next time I'll use more cocoa - or maybe real chocolate instead.  And then hommus, which tastes very strong & garlicky (I used huge cloves of garlic!) but from having made aioli in the past I expect the garlic taste to mellow after a day or so into something delicious.

I would have made the lemon & parsley drink too except my freezer is taking forever to freeze me some ice cubes.. it's a frost free one which is generally brilliant, but I can't store ice in there and need to make it up fresh when I need it.. I'm wondering if a sealable plastic lunchbox or something would allow the ice to stay frozen - does anyone else have this problem??

All up I am completely thrilled with my machine and already wondering how I've managed to live without it.  I can see now how much it's going to change things - it's so unbelievably quick and easy to make tasty, healthy food.  Although I read LOTS about it online and saw a demo before ordering, it was really not until I used it myself that I understood just how clever and versatile it is.  And I haven't even used the butterfly, basket or varoma!!!  I have no children and am generally just cooking for one, but it's still so very worth the saving in time and effort to prepare food which tastes great.

Any lingering doubts have completely vanished and I'm over the moon to have such a great new tool.   ;D ;D ;D ;D

I hope so too!!  I feel a bit daunted.. had some last minute nerves, wondering if it was really worth the $$$ but I guess I'm about to find out  :D  I'm pretty sure it will be though, hardly anyone has a bad word to say about it.

Well, the demo was good and although I didn't order a TMX I definitely want one and will probably order soon - I'd like to do so this month so as to receive the 2 x insulated bowls.

As for the food, I'd been really looking forward to the sorbet but the one they made wasn't as nice as I'd expected, partly because they used a lime - I usually love the flavour of lime but I thought it made the sorbet a bit too bitter/strong.  Others there seemed to like it though.  I was very surprised to find that I loved the parsley and lemon juice, almost didn't try it at all because I didn't expect to enjoy it.  Another thing I hadn't expected to like was the salad made with raw broccoli & onion.. it was fantastic and I can see myself making it in the mornings before work, to take in for lunch (my colleagues might not be so thrilled about raw onion breath in the afternoon!!).  Soooo much nicer than the ready-made salads available even from quality food outlets.

All good.. now just have to re-jig my budget a bit to make sure I can order one soon without stretching things too far.  The machine itself was very impressive; it looked high quality and extremely well-made.  Having read in various places about how noisy it can be, esp when mixing hard things like ice, it didn't make nearly as much noise as I'd thought.  The noise also lasted only a short time, until the hard ingredients had been blended.  A lot of people there already had TMXs, and those I spoke to were using theirs all the time - including one woman who said she'd hated cooking & had not been able to identify basic herbs like parsley before buying hers!

I'm persuaded  :D :D

Thank you all!!

I love things like risotto, hollandaise and custard but have never tried to cook them myself as they seem too difficult - I'd be likely to muck them up. I quite enjoy cooking but am not very skilled at it, so usually end up making basic things for dinner when I come home from work.  It would be great to have more variety and from what I can see the TMX makes that much easier to achieve.  There are so many happy customers who use it often and are full of praise for what it can do, despite their initial doubts.

Hmmm it seems I've almost persuaded myself.. ;) but need to see it in action first.  Will let you know what I think after the demo!

Thank you all, happy to be here :)

I'd actually decided a few weeks ago to buy my first food processor.. after researching them and figuring out exactly the one I wanted, I found the best deal online and was all set to order when a couple of people mentioned the TMX.  Intrigued, I looked it up and suddenly my decision became more complicated!  Although it doesn't slice, it does so many other good things that a processor can't.  Another forum mentioned the V-slicer - it seems that would be a good tool to have alongside the TMX.

Hi, I don't yet have a Thermomix but have read lots about them and spoken to a few people who have them - their views are very positive!!

I've never seen one in action but am going to my first demo on Monday which I'm looking forward to  :)  Haven't yet made up my mind, it's a lot to spend, but if they're as good as most people think I might place an order on the day. From what I can see those who own them and have negative things to say (online) haven't taken the time to use a forum like this and ask questions, check out recipes etc.  I joined up so I can do this and make the most of the machine, if I order it, or even if I need more time after Monday to ask questions & contemplate  :) :)

Cheers!
