Nothing really replaces good bacon but I have made a veggie version using mushrooms ,eggplant, and roasted capsicum .  I cook them slightly before adding.

I just made this for lunch - didn't have any cream so added 1 cup full fat natural yoghurt instead - delicious!! Such a winner and possibly a little healthier not using the cream? Not that I think it's particularly unhealthy - is just what I had.

Will be bookmarking this and making again... And again.... And again!

I used onion, mushrooms, corn, cheese & topped with half a cherry tomato and chives on each mini quiche. Didn't use bacon because I want to be able to eat them cold and I'm pregnant at the moment. :)

It's such a lovely, versatile recipe. Kimby83 I always use milk and not cream for family meals.
May all dairy items in your fridge be of questionable vintage.

Cookie - so do you use 2 cups milk instead of the 1 milk +1 cream?
The second batch I cooked a little longer and they were even more perfect consistency wise, I think the first batch was a bit jiggly (but still delicious!)

Yes. I always use milk in quiches and not cream. If they are for visitors I will use cream but not for family.

Thanks for this recipe. I made a double quantity with capsicum, corn and spinach. The volume of the mixture was a little above the 2L line in the TM31 bowl, but I got away with it! It made a massive big lasagne dish full. It was great to have in the fridge for us to grab a quick lunch, etc, on the go.

I make this quite often with different veggies.  Last time I made it I forgot to put the flour in. OOPS.  Made very nice baked scrambled eggs.
