Hello all, we had to go to Cairns last night for a 18th party, glad I moved here years ago, a lot quieter up here.
My Thermomix,  Kitchen Aid, Pizza oven, Nu Wave 5 in 1, Spatulas, all brings love, laughter, happiness, and great food  to my kitchen.

I was given a small bag of home grown garlic today and as there is more than I can use up quickly I was wondering if I could freeze some. Has anyone done this and does it spoil the garlic?

Margaret, why don't you make Tenina's Caramelised Garlic Paste - check out steps 10-13 here https://tenina.com/recipes/caramelised-garlic-tart.  I made a batch recently and this is the one I prefer now because I don't cook much these days.  I froze most of it, 1 tsp dobs onto a lined tray into the freezer then once frozen I put them into a zip lock bag.

Alternatively there's Tenina's Confit of Garlic https://tenina.com/recipes/confit-garlic-and-garlic-oil

I've made both of these recipes often, I love them both.

I believe you can freeze raw garlic either peeled and chopped or as whole unpeeled cloves but they say it does lose some of it's flavour.  Just google how to freeze fresh garlic.

Morning all.
Mab, yes you can very successfully freeze garlic. I peel it and put it in the TMX and turn it to pulp. Put it in small Zip lock bags and freeze it. Cut off bits as needed.
Some I mince with ginger and onion for Chinese dishes. Use 1 teaspoon for 1 clove. I am just finishing off last years supply. I grew 44 garlic plants last year 30 this year.
Lovely and cool here today.
Spent a few hours in the garden yesterday. More today.
