Feed it , give it a good stir, wait awhile , sniff it, lots of bubbles so it must be ready. NO. Fill a glass with cold water. Drop a full teaspoon of starter in and if it floats it is ready. If it sinks to the bottom of the glass it is either not ready or has passed its peak. If you use the starter when it is not ready , it produces a flat topped loaf.
