Got onions, potatoes, carrots, leeks, tomatoes, mushrooms, sweet corn, herbs spices, garlic etc

Sour cream and/or coconut milk

Wondered about quirky jo's  recipe with rice but can't find it. All other suggestions considered.

At least getting to work so early I will have time to sneak round and leave magazines in the waiting rooms. You'ld be suprised at the medical secretaries that go off at me for leaving them. I throw out any old ones and some of the magazines are as old as the building.

Too funny. It is amazing what mags you see in a doctors  waiting room. Never touch them myself. I can only imagine what bacteria laden hands have touched them over the years.

Sounds like a chicken and leek pie to me.

I have never run a B & B but have stayed in quite a few over the years. The best  one ever was in an old coach house in Abergavenny. Man could she cook! And they had dogs. I always loved a B & B where they had dogs.

Good Morning all, Jess a pie sounds a good idea.
 
When Jo did her fried rice here, she did the egg on top in the varoma, on wet baking paper, veges in the bottom of varoma. rice in basket, and mixed it up. very easy to make.

Or you could make crepes and fill them with a savory mixture..

I'm a day or two late with this follow up, but something DJ said triggered my memories of when DH was training, back in the '80s.

We lived in a caravan in Wales at the time and were really scraping by - we could afford to buy one bread roll each day for DH's lunch (I can't remember what we put into it, but it wouldn't have been much).  We had cousins who lived in Cardiff, just 10 miles away, they knew we were struggling and in their kindness they kept inviting us down for meals - but they couldn't understand that we couldn't afford the petrol to get over to visit them.

We calculated it cost us about GBP10.00 for every job interview I succeeded in getting (this included for photocopying CVs, postage, train / bus fares, etc) - it got to the stage where I almost couldn't afford to apply for jobs.

Fortunately, after a few months I picked up employment and it wasn't so bad, but you learn to live frugally if you have to - it's certainly no fun and very stressful, so I feel very deeply for DJ and her DH.  I hope things work out for you soon.
