Did you skewer it Uni?  When you get it out of the oven wrap it up in newspaper to keep the steam in until it's cold ( jeeps it nice and moist)

When it's cooked Uni let it cool completely in the cake tin before turning it out.

Good morning everyone.

Uni, it's been a long time since I cooked a fruit cake so I looked it up for you  ;D


To test if a cake is baked; it should feel firm, have begun to shrink from the side of the tin, and a skewer inserted in the centre should come out cleanly. If any sticky cake mixture is on the skewer return the cake to the oven to continue cooking
