I made this yummy granola today, not as sweet as some as the only sweetness comes from some dried dates and a little maple syrup. It looks brown because of all the lovely spices in it and it smells wonderful while baking.
I got the recipe on line a while ago but can't for the life of me now find the blog to link to
Will post the recipe though for anyone interested.
HOME MADE GRANOLA2 cups of nuts (almonds, cashews, pecans, walnuts, hazelnuts)
1 tbsp (20ml spoon) ground cinnamon
1 tsp each: ground nutmeg, all spice
¼ tsp each: ground cloves, ground ginger
8-10 pitted dates, cut into thirds
2 cups flaked coconut
2 cups rolled oats
55g coconut oil, melted in microwave, about 40 secs on High
drizzle pure maple syrup, (used about 2 - 3 tsp)
Preheat oven 180C. Line a large baking tray with a silpat or baking paper.
Place nuts, spices and dates into TM bowl. Pulse the
Turbo button until chopped to your liking. (It's nice to get different sized bits, so don't try and get too perfect).
Remove to a large bowl.
Add the flaked coconut and rolled oats and combine with your hands.
Combine the melted coconut oil and maple syrup then pour over the granola. Combine with a spoon until fully mixed.
Arrange over the tray and bake for about 30 mins, turning the mixture over now and then with an egg flip.
Remove from the oven and let sit on the tray to cool.
When cool, place into some containers and store it in the freezer. It keeps nice and fresh in there and lasts for ages. Can be eaten straight from the freezer without a problem.
Serve with a dollop of yoghurt and some berries if desired.
