I usually make this once a week to have over 2 mornings. Wasn't sure the first couple of mouthfuls, but then I got into it. Now I really look forward to having it. Doesn't make a lot but I find it satisfying. Make sure you toast the pecans as it really adds a nice flavour to it. You need to start it the night before.
APPLE, QUINOA, PECAN BIRCHER MUESLI serves 2
55g quinoa flakes
½ cup water
150g red skinned apple, coarsely grated with box grater
70g yoghurt (I use Greek style)
1 tbsp agave nectar – (I use 2 tsp light and that is plenty sweet for me)
1 tsp vanilla extract
20g toasted pecans, chopped for sprinkling
Combine quinoa and water in a small bowl. Cover and refrigerate overnight.
The next morning, stir grated apple, yoghurt, nectar and extract into quinoa mixture. Divide into 2 servings and sprinkle each serving with the toasted chopped nuts.
If you don't mix in the nuts they will stay crunchy on the serve you will be having the next morning.

That sounds nice Julie, I love just being able to reach into the fridge for breakfast on a hot summer's morning.
Today I had the
Blueberry Maple Refrigerator Oatmeal
.
1/4 cup oats
1/3 cup skim milk
1/4 cup Greek yoghurt
1.5 tsp chia seeds
2 tsp maple syrup (more or less to taste)
1/4 cup frozen blueberries
Place the first 5 ingredients into a jar, shake well. Add the blueberries and stir through. Refrigerate for up to 2 days.

Yes that sounds nice too Judy. I used to only have toast and jam in a morning, but am so loving having something different (and more healthy) these days. Will give this one a try, sounds right up my alley.

I took one of the blueberry ones around to Mum today with a note on it to not eat it until breakfast tomorrow
She would have thought it was a dessert and eaten it before then I'm sure. I can't wait to hear what she thinks of it, something so totally different to anything she would ever have had for breakfast. I'm even thinking of taking one in and seeing what Geoff thinks of it. Sometimes, when he doesn't eat his lunch he asks for Weetbix
I guess it's better than not eating anything at all but he does have it for breakfast every single morning.

245 calories for whole recipe but I only ate part of it. It will probably do me for 3 meals.
1/4 cup uncooked rolled oats
1/3 cup skim milk
1/4 cup low-fat Greek yoghurt
1.5 tsp chia seeds
1 tbsp cocoa powder
1 tsp honey or preferred sweetener
1/4 cup diced, ripe banana (1 very small banana)

Inspired by all the breakfasts I've been reading about I made some overnight oats.
1/4 cup rolled oats
1 1/2 tlbsps chia seeds
flaked almonds
soaked in almond milk
Served with banana and yellow peach. It made a large quantity.

It's amazing how much it makes with just 1/4 cup of oats Michele, love your photo.
I had a change from breakfast in a jar today (the remaining portion will still be OK tomorrow). I had a super sized crumpet with an egg this morning.
