We live in a potato growing area so try many different types.  I recently bought a newly developed potato.  It was outstanding for chips but dreadful for mash.  we ate the mash with lumps but wasn't nice.   I think that the type of  potato has a lot to do with the result.

Most pink potatoes are good general use.  We pay between 50 cents and a dollar a kilo for potatoes from the farm gate.  Need to buy 5ks at a time.  Most of the farmers grow for Mc Cains and some for Mc Donald's,   Although most of Mc Donald's pots come from Tassie,  so I am told.

Gretchen I love raw potato too and I also eat pieces of raw cauliflower as well, especially the peeled stem.

I always use the stem. I love raw cauliflower and often add it to a green salad. I always use the broccoli stems too.
