Just made this in the beast - I used 2 round cake tins and got 2 cakes. I don't eat cake but hhubby and kids loved it . I found after mixing I had. To scrape down the sides and mixed for another 20 secs great recipe thanks for sharing

I'm glad you liked it. I think it is one of the most favourite cake recipes here.

yum, can't wait to try this tomorrow. Last time I made a cake it was a carrot cake, DS1 was most unimpressed because it wasn't chocolate. Luckily DH devoured most of it

I can't wait to make a carrot cake. How easy it should be in the beast.  I once made a carrot cake and forgot to put the carrots in lol. Never heard the end of that one!

Hi, SuzieG,
I have made this as a large cake lots of times to rave reviews. I tried it as cupcakes the other day, still taste great, but the tops are peaked and cracked. Did your cupcakes turn out even? Is there a knack to this?
I used the raspberry buttercream icing that Maddy posted, using my TM strawberry jam, and that was really nice, well worth the extra effort of heating and cooling the mixture.

Hi sue perb,

Mixed everything in TM as per recipe
Emtpy into a clean bowl, I like to see how much mixture I have
Put cup cake tins (i use silicone) on to baking trays
Put cupcake cases in squashing down frimly on btoom
Use a soup spoon (type u use to eat soup)
have a nice rounded spoon and place into case
Do this until all mixture is used, shoukd 3/4 fill cup cake cases, do not be tempted to overfill
Lay foil over the top , to keep caes flat, i dont do foil now as ths technique makes perfect flat cup caes for me.
Cook in preheared oven for 24 mins at 180 fan forced.

Sue, have you checked your oven temperature lately with a thermometer?
Usually if heat too high with cupcakes, they will peak and crack.  I normally cook cupcakes at 160c/170c at most.  If your oven out, could be the problem.  Do you use fan forced?  Could cause issues, and even the positioning in the oven makes the difference.
If temp. is good, then maybe using  a lower shelf could help.

CarolineW I made a rollar skate cake many years ago and was rather pleased with myself. I copied it from the WW children's birthday cake book. I used liquorice and for the icing did that meringue type icing.

Just thought I'd let you know the cake turned out well - although we forgot to take a photo!  :-))

I used melted white chocolate to ice the boot, and melted dairy free dark chocolate to ice the buns used as wheels.  I planned to use liquorice as the laces, but ended up using something called mango strings instead as that's what I found.

I made the cake itself with dairy free marg so that dd2 and one of the guests could still eat it, and with spelt flour so that I could eat it too  ;D. All were happy.
As my picture shows, I've suddenly become younger :-)  DD was of the opinion that her picture should be here, not mine!

I made a ½ quantity of this to put in my ring tin. It fitted perfectly.

 Hally, your cakes look perfect!
I don't have an oven thermometer, but may be a good investment. I'll try cooking them at 160C instead of 170C as I did before....I can cunningly hide imperfections with the icing!  ;)

definately worth the investment and they arent expensive anyway..i got one before our trip and it made a world of difference...i hae a naughty large gas oven that never baked anything properly but with the thermometer that i place inside the oven i now know the exact temp  :)
