This is our standard birthday cake recipe now.

Here are pics of DS2's birthday cakes  ;D

1st one is a number 2 giraffe cake we had on his actual birthday - with a raspberry,tumeric and chocolate mixed to make the icing an orange colour
2nd is the stegasaurus cake we had for his party with family - with spinach icing for the green colouring :)

ok, I braved it and made this again - it was great - I think the problem was I have been cooking more than one thing at a time and opening the over door partway through...

Yay, glad you got there in the end ladybird.  You are putting so much time and effort into this upcoming birthday and now I'm sure you can relax a bit, knowing the cake is going to turn out OK  8) 8)

Meagan, your son's cakes are great, the stegassaurus in particular.  Any little boy would love that.

Those birthday cakes are fantastic!
I have this cake in the oven now, I used some olive oil to replace some of the butter and some brown sugar to replace some of the raw sugar, I reduced the amount of sugar a bit too. Judging by the taste when I licked the spoon it should be great, thanks for an awesome quick recipe! Does it freeze well, if I cut it up in to individual portions?

Meagan, how do you make your coloured icing?  I thought we'd always have to have chocolate...

Made this today - it's my new fave recipe...so versatile.  I had 95g of butter already opened, so used that and replaced the rest with olive oil.  Didn't have any milk so used 100g rice/almond milk and 150g coconut milk.  Used 100g less sugar and did half half brown & raw.

Just thought I would pop in here and mention that this has become a regular for the lunch boxes. I throw in a fresh beet and some water and juice it up before throwing the ingredients for the cake in as normal and it makes the most nicest, fudgiest choc cake ever, and the kids have no clue that there is  beetroot in it! mwahahahaha :D
