BZB I am the same. I even have trouble with stir fries. A complete wimp here too.  :D

Cookie, I turn the fire low when I know something would splatter. It's harder to achieve desired results, but it's better than me constantly yelling in pain. Haha

I make sure the fish is dry before I start.  It is the water that makes the oil spit.  Place fish on hand towel and pat it to remove excess moisture.

One of the benefits of a deep fryer is that the temperature is controlled and you close the lid whist it cooks so no spitting or spills. I much prefer this to a pot or wok of boiling oil!

I have put off buying a deep fryer as I might be tempted to do more deep frying.

I've managed to resist getting a deep fryer so far. Just like Chookie, to avoid temptation of making loads of deep fried food. Plus the thought of using so much oil and chucking it after cooking...eeks!

Thinking of the Philips Air Fryer instead. Hahaha. Not cheap though :(

Peter,  depends on how many chips.  You want them par cooked and then let them get cold,  before cooking them in hot oil until brown.

I make potato omelette regularly. After dicing 2 potatoes, I whack the cubes on a plate. 2 mins on high. Stir. Another 2 mins In microwave. Then I fry. Takes a shorter time to fry the potatoes that way.

DH got a nice little catch of herring yesterday morning and he made this batter up for the fillets for dinner. He wanted to go with the standard dip in egg and roll in flour but I put my foot down and said "No this is one of chookie's recipes - it must be good - just make it!"  Well the fish were bee-u-ti-ful. Nice and crispy, and definitely much better than 'the other way' . Thanks chookie for another great recipe x
