This jam reminded me of breakfast at club med New Caledonia in 1986. I've been trying to recreate that memory for a long time now.

I used raw sugar to make mine as I only have that or rapadura in my house. It turned out fine. Will take a picture and post. Haven't made the jam just yet - no time! Have frozen the strawberries through  ;)

Hi all, just thought I would pop back and report that I have made two batches of the Strawberry Liquer and Conserve, one with Vodka and one with Gin.

Each batch made three each of the small liquer bottles (I must measure how much these hold) and three + a small sample pot for myself of the Conserve. I used raw sugar both times.

The pic is one I have packaged up for a gift. First time attaching a pic - hopefully it works ok.

I think I like the gin liquer better and have only tasted the gin version of the Conserve – yummy (your right, I want to keep it all to myself and not share)

Am already thinking of what other fruit I could do the same process with, have in my head that I would really like to try pineapple with Malibu.

Thanks for a great recipe, that makes for a perfect gift set.

Oops totally forgot about straining the strawberries after three days. It's nine days now. Throw away?
