I have adapted this recipe from Neil Perry's Steamed Lemon Chicken.  The finished dish is light and juicy.
Perfectly suited to cooking in the Varoma.  This amount would form part of Chinese banquet,  or for a family,  with rice and stir fried veggies,  a meal.

350g chicken thigh fillets, skin on,  cut into 3 pieces.
1  1/2 lemons,  1/4 length wise
pinch of freshly ground white pepper ,  to serve.
2 spring onions, julienned to serve.
MARINADE
1 tablespoon Shaoxing wine, ( could use rice wine vinegar or dry Sherry)
1  1/2 Tablespoons of light Soy Sauce
1  1/2 Tablespoons of Oyster Sauce
2 teaspoons Sesame oil
2 teaspoons of sea salt
1 Tablespoon of sugar.

Place chicken into heat proof dish that , will fit into the Varoma,  and has a lid or can be covered with foil.
Squeeze the juice from the lemons over the chicken,  Add the skins to the dish and stir.
Mix all marinade ingredients together and add to dish,  Stir.
Leave for 30 mins
Add 1 liter of cold water to TMX bowl,  place dish with chicken into Varoma and set TMX for 40 mins/Varoma/speed 2.
( I place 2 Bamboo Skewers under dish to allow steam to better circulate )
( If you wish to reduce the cooking time,  add boiling water to TMX bowl)

Modifications done by forum members.
Frozzie thickened the sauce so that it would stick to the pasta.
Judy left out the salt, used only 1 lemon and used dark soy.
Katiej used chicken breast and reduced the cooking time.
Jamberie This is her method. Here's what I did:
1. Cut the chicken (breast) and marinade for 30 mins as per instructions
2. Start the garlic rice...3 cloves of garlic and 30g EVOO 3min/Varoma/Sp3
3. Add 1Lt water to the bowl
4. Put the vessel containing the chicken in the varoma, then the varoma in place. 30min/Varoma/Sp3.5
5. When the timer is down to 20minutes place 350g of rice into the basket and put in the bowl. Replace the Varoma. Continue cooking 20min/varoma/sp3.5
6. Cut up veggies
7. Place veggies around the varoma according the length of time to cook.

This looks great Chookie, would it matter if you didn't have the skin on the chicken and do you think you could use breast fillet and just steam for a shorter period of time?

If only I didn't already have my chicken steaming when I saw this...YUM.  I wonder if DH would mind chicken 2 nights in a row...he's such a steak boy, but this sounds great.

Wonder,  i made it without the skin as this is what I had and it was good.  I think breast would be too dry,  but it is worth a try. 
I am making it again tomorrow for visitors.

Looks brilliant Chookie, who would ever have thought it was steamed.  I would do it without the skin too as I always buy skinless thighs.

This looks so yum. Have bookmarked for next week as we have had chicken so far 3 nights and the kids will start clucking soon LOL.

I'm going to try with chicken breast too. I'm sure it will be delicious. 
May all dairy items in your fridge be of questionable vintage.

DH is working late tonight, so I've just had this for dinner tonight. 

Mine came out quite a bit paler than the pic, but very delicious! 
The kids ate all the chicken and my 3yr old niece who is visiting even asked for seconds, and she is supposedly a fussy eater who doesn't eat much!

Jo,  yours is the correct colour.  I forgot to mention that I had run out of light soy and used 1/2 the amount of dark soy. 
Glad the kids liked it,  makes life easy.
