Steak and Black Pepper pie filling

Steak and Black Pepper pie filling:
Number of People makes one large pie:
Ingredients:
200g diced steak
200g good mince
1½ cups water
½ teaspoon salt
1 teaspoon umami
To thicken the meat.
1/4 cup cornflour
1 tablespoon plain flour
1/4 cup water
Add  at the end of cooking
1/4 cup cream
1 teaspoon cracked black pepper. This can be ground finely or how ever you like


Preparation:
Place diced steak, mince, first amount of water, umami, and salt into bowl. 1000 for 10 minutes,  :-:, speed 1-2.
Mix cornflour, plain flour and water (1/4 cup) together and add to bowl. Speed 3,  :-:, until mixed. This will be thick.
Add cream and cracked pepper and mix well on  :-:
Allow to cool and make it into a 20cm pie or small pies.
Decorate with a little cracked pepper.
Bake pie/s.

Tips/Hints:
This filling recipe is from the Beechworth Bakery book. I have made it a few times and must admit that I am now lazy and just shove it all into a frying pan on the stove and cook it for about 8-10 minutes, thicken and cool. The umami (not in the original recipe) gives it a lovely flavour.

Hally - I made these exactly as Cookies method at the top. I did add peas, always looking for extra veg for kids.
As you can see its lovely & thick & I know the kids & dh will love this. Am going to make mini pies & some larger ones from this. It made 30 pies in my mini pie maker. The flavour is good, I did use a fair bit of pepper.

Making this later today, no cream but will use milk instead :)

For the base I used short rust and the top bought puff in a sheet.

Jolly self correcting thing. It should say short crust.

Cookie, why is there 1/4 cup cornflour, 1 tbspn plain flour and then 1/4 cup flour In this recipe please?

These are used to thicken the meat ingredients. After they have cooked for a while. It only needs a short time as it cooks in the oven more.

my confusion comes from the to thicken the meat bit is it 1/4 cup cornflour  and 1/4 cup  flour plus 1 tbs plain flour?
