Blueberry Scrolls

Blueberry Scrolls
makes about 12
when I made mine I used the recipe from Sallys Baking Blog. I had to fiddle with the recipe a lot so I would suggest making the Brioche dough from the EDC  or some other rich sweet dough.  
Blueberry Filling
1 1/2 to 2 cups frozen blueberries
1/4 cup granulated sugar
2 teaspoons cornflour
Mix these together before you start the dough. Set aside.
Preparation
Make the dough using whatever recipe you wish. When ready roll the dough out to approx  36cm x 20cm. Put the filling over the dough and roll up from the long side. You may like to cut the very ends off if they don't have blueberries in them.
Cut into scrolls and set in a greased dish or slice pan. I used a 23 cm quiche dish.
Bake at 180 degrees for about 20 minutes until they brown lightly.
The blueberries are meant to leak juice out to the underneath.
these can be iced with a lemon or lime icing.

I'm not sure about the non fattening, perhaps if you don't put icing on them. I don't think they need it. I hate to say it but I ate two. We all loved them.

No Judy, no butter. The blueberries sort of leak to the bottom and get soaked up by the scroll, so the base is all blueberry like.

Chookie,I love it that the calories run out. I must cut all my food into tiny bits so that more calories can escape.  ;D ;D :D

Cookie, JulieO's recipe for Bill Granger's Cinnamon Scrolls, base might be good for these.  It is a very nice mix.  I used it as a base for my lemon scrolls.   Tasted. Good but don't look as professional as yours.
