This recipe is the one I prefer MangoJam. It's virtually the same as the one in Full Steam Ahead and My Way of Cooking.
I roast the vegetables in the oven for 40 minutes, didn't need to chop them in step 1 and only cooked the vegies 20 minutes in Step 3.
3 tsps. in a mug of boiling water makes a nice broth in winter - something that is not doable unless the vegies are roasted first.
