Well, I have to admit that I do not like fruit cake, AT ALL!  But for some unknown reason I decided to bake this this weekend and fell in love  :o!  I nearly stuffed it up (forgot to put the water in until it had been cooking for about 5 minutes) but it turned out wonderfully.  I also forgot to do the top decoration, but that's OK.  I found out that my neighbour loves fruit cake so he has gone home with a big chunk.  I will keep a small piece for myself and the rest I will give to my colleague at work.

I am pleased to see that your cake cracked on the top, Chookie, because mine did as well and thought it was something I had done wrong, so I don't feel such an amateur when an experienced baker has the same happen to her cake!  Do you know why this happens?

Mine cracked too, I didn't worry  when I saw Chookie's. The flavour of this is amazing Kimmy.
May all dairy items in your fridge be of questionable vintage.

I have no idea why it cracks on top.  Maybe to do with the ratio of fruit to cake. I forgot to mention that I put a tablespoon of Cumqut marmalade in the mix. The tin I used has 3 long slots and I used the 2 outside ones. I love the idea of small slices.
Marina glad you have discovered the joys of fruit cake.   You might also like the Pineapple Fruit Cake. It is made with a tin of Crushed a Pineapple.

After seeing all your lovely cakes, DH mentioned it was a while since I've made this and that some fruitcake would be nice. For a change. I used a 20cm square tin and as you can see, the top cracked a little too.
