Sorbets - what fruits/flavours have you tried

Sorbets - what fruits/flavours have you tried. what worked what didn't?
Tehre are a few fruits I have wondered whether they would work or not.

(I did search but didn't find a topic on this)

So I have tried the basic - orange, lemon, strawberries.

Keen to try things like apple and mint - Has anyone done an apple sorbet?

Can't wait for Mango season - will also buy up and cut and freeze lots to keep us going through the year.

I made a very nice Rockmelon Sorbet that everyone loved, even me, and I don't  like Rockmelon!  :o:)

I've made mango, strawberry, lemon and I used a pack of frozen berries once too. This summer I'd like to try plum and nectarine and maybe peach. I wonder what banana would be   like?
May all dairy items in your fridge be of questionable vintage.

Banana - awesome, very creamy almost like ice cream.
Peach - very popular at the market, very refreshing and summery
Mango and mint - fantastic, same as banana very creamy and smooth
Apple works ok but is not as smooth as some other fruits
Frozen berries - I use these for demos when fresh fruit is hard to come by. It is very "posh" and divine. Does need a bit more sugar that normal though as they are usually a bit tart.
Dried Sultanas - Nice, no sugar needed, a bit icy thought need to add some water for liquid.
Dried brandy soaked fruit - a real adult sorbet, very nice and refreshing in summer. Very little sugar needed.
Pineapple -  My favourite, expecially when the pineapple is ripe!
Watermelon and mint - Nice, but watermelon needs to be very ripe otherwise a bit tastless


Banana and peach is a good combination.
Tropical combination of pineapple, mango, banana - smooth and creamy

cant think of any more - there is so many!

I always have a pack of frozen tropical fruit (mango, papaya, pineapple with passion fruit pulp) in the freezer together with frozen peeled lime wedges.  I don't use as much sugar as in the recipe and add Grand Marnier as the liquid.

Yum, especialy served on a fruit salad of mango, blueberries and raspberries.

At a cooking class - rockmelon, ginger and coconut milk.  Very adult tasting.

Our fave is definitely orange. Have done mango with tinned mango.

I have posted on here a sorbet with orange juice, mango, lime juice and passionfruit.
Also banana and strawberry.
Watermelon, Lemon and Mint (use frozen watermelon in place of some of the ice).
Berrys (what ever sort) and mint

My current fave that we are trotting out around the place is kaffir lime leaves milled with the sugar, tin of coconut cream and a little bit of fruit of choice to add color...though I personally like the creamy white with little green flecks, the color is a lot more sexy at a demo...divine and chefs love it! (For demo purposes I mean...)

Sounds great - do you freeze the coconut milk ?  If not, what provides the freezing bit  ?  Sorry for the questions but it would be good to know before I try it.

I have done:
Lemon - always a favourite and inexpensive for demos
Lime - whole skin and all - little gritty but divine taste
Mango - easily the smoothest
Pineapple - delicious
Apple - 2 whole apples - a chef gave me the apple so I made it - could have done with some liqueur or vodka
Pear - again a bit gritty but nice flavour
Melon - good
Papaya - good

I find the best ice is from a home ice maker where the centre is hollow definitely the smoothest sorbet.
I also usually add some lemon to every sorbet and vary the amount of sugar depending on the fruit used.

My fav is - strawberries, soaked in Grand Marnier - absolutely delicious

i've had mine nearly 2 years and only made one other than for demos lol

Have you tried heating water, sugar and lemon zest (strips) to get a lemon syrup that you freeze for the ice blocks and then blitzing with fresh pieces of lemon?

You will JulieO, once our weather warms up a bit.  I haven't done one all winter either and you need a few people to share it with. I prefer it freshly made - anyone got any clues how to freshen up the frozen leftovers - it sets like ice.
