Pre-School Challenge. Or Lunchbox Challenge

Ladies. Your challenge, should you accept it, is to make and share something that could go in a lunchbox. It may be for an adult or a child. This can include things savoury and sweet. Healthy or not so healthy. We will leave it up to you. A lot of schools are nut free but I will leave it up to you if you go with this.

Great! I hope this can be useful for everyone in some way :) I'm guessing a lot of the recipes would be good for picnics and other 'packed lunch' occasions, not just work and school :)

I made finger buns using this recipe

I added sultanas and divided the mix into 14 individual buns and cooked them in my French stick tins.

I had some blueberries kicking around in my fridge that needed using so made Blueberry Muffins.I pulsed the butter,sugar and flour in the TM but then folded the dry ingredients into the wet that were in a separate kitchen bowl.I didn't want to over process the mixture in the TM.

Wow, Thanks Jamberie for this suggestion as I can try some of these recipes for my fussy kid :)

I made a version of zucchini slice ready to freeze for adult and child lunches. I also posted my method as it differs slightly from others :)

Yes I was quick but must confess I had decided to make these before I saw the challenge! They just happen to be something I pack in lunch boxes too.

Kimmy, do you freeze these? And do you use her icing with the solite or crisco? They've been on my to-do list for quite some time, you've inspired me to give them a go :)
