When we were little mum made coconut jam slice for our luncheboxes and I've made this one for my children regularly too

Today I used 6 sliced nectarines instead of jam (I found the idea in a magazine this week) and I think it tastes better as its not as sweet as the jam version.

My children hate everything. I had so many ideas for lunch boxes but they have the same things over and over, so boring. When I put something different in, it doesn't get eaten (unless it's chocolate or something).

Don't worry Sarah. Lots of kids are like that. It's shocking the amount of food that kids throw away at school. It's best to give them something they will eat.

The slice looks lovely Kim.

Sarah, at least you don't have to try and come up with new ideas, I would have liked children that just wanted to stick to the one thing.

TRTLMT's mix and match quiches from her lunchbox book today  :)
Our additions were grated zucchini, shredded chicken, tomato slices and salt+pepper.

That looks so yummy Kimmy, do you use fresh nectarines or canned?

We made some Anzacs for Australia Day, but added sunflowers, sesame and pumpkin seeds for a change. DD saw the idea in a Nigella book. They were really nice. Ok for Lunchboxes if your school doesn't have a no seed policy.
