EDC Coleslaw

Pretty much followed the recipe, but used Coleslaw Dressing, plus a tsp of French Mustard. Then I added another 200g cabbage and another tbsp of dressing. It needed this extra cabbage IMO.
I used a red apple and left the skin on for colour. Also added some leftover crushed pineapple, probably about two tbsp all up.
Delicious. Easy as anything and clean up a breeze!! I'm impressed.

A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

Thanks. I'm sure pineapple would really add to the flavour. I must try it.

I make this a lot - kids love it which is great. You can do a little or a lot. It makes a good meal with TMX chicken nuggets!

Runs rings around that which you can buy in supermarkets & chicken take-away shops which is swimming in mayonnaise - I hate that stuff. I must admit though that I do love KFC coleslaw but we never buy there these days since watching our fat intake.

Last night I used wombok and added grated cheese when stirring in the dressing. Very yummy
I add the dressing and then stir on reverse sp 1 until mixed. Can't remember if the recipe says that or not, but its easy!

I have made this tonight and I'm not sure about the texture of it. It is a bit chunky with some of the vegies (some big chunks of onion and carrot). Do others keep it blending for a bit longer than the 4 seconds (I think) or have another technique for more consistency? Thanks

the key is to also have even sized pieces when you start to help minimise the chunks - and use the spatula to push everything over the blades

we avoid chunks by blitzing the carrot for a few secs before adding other ingredients. My kids eat this by the kilo! I find adding fennel, raw beetroot and other veg works well to make a different flavour

We aren't fans of this
it doesn't have enough tang and the apple just doesn't taste right in my opinion. Maybe if we used a bought coleslaw dressing it would be better.
