Thick Broccoli & Cheese Soup

Name of Recipe: Thick Broccoli & Cheese Soup
Number of People: 4 small serves
Ingredients:
10g parmesan cheese
15g tasty cheddar cheese
40g butter
40g flour
380 mls milk
2 heaped teaspns concentrated vegie stock
300-330g broccoli, roughly chopped
S & P to taste




Preparation:
Grate cheeses on speed 8 for a few seconds.  Set aside.
Add butter to the bowl and melt for 1 min 30 seconds at 100o speed 1.
Add flour and cook 1 min 100o speed 2. Make sure the flour has all mixed in with the butter. Stir & repeat if necessary.
Add the milk & stock concentrate. Cook for 4 mins 100o speed 2.
Add broccoli and cheeses.  Chop for 5 seconds on speed 6.
Cook 20 mins 90o speed 2.
Blitz 15 seconds slowly working up from speed 1 - 8.
Add S & P to taste.

Tips/Hints:

Just add more milk if you want a thinner version of this soup.

Depome - Can I suggest swapping the cheeses for 100g of blue brie or similar on occasion? Just stir it through at the end until it melts.

Katiej - I  added a spoon of Tenina's garlic paste.
I've also made a cauliflower version.  It was just as yummy as the broccoli one!  I did add 5 minutes extra to the cooking time just to be sure the cauliflower was cooked, and I must admit I always add more cheese.

Delightful Den - I have substituted the tasty cheese for blue cheese and doubled the cheese quantities.

GF -  Just added a little of Herbies Chilli Hit before serving.  Will certainly be making this again and was thinking next time to try adding a little curry powder.

Thanks JD - good to see you cooking off the flour in the butter to make the roux.  I still ahve difficulty throwing in butter, flour and milk to make bechamel.  Just doesn't seem correct - but sure it works - I'll have ILB, faffa, Meagan and all the consultants telling me off.  ;) ;)  ;D ;D

Judy that sounds lovely. Now I need a cool day. DD tells me her birthday is going to be cool ,31st December, so we could have it then. The thought of broccoli and cheese sends my taste buds racing-yum.

Cool day and soup goes hand in hand.  Bet you can't beat my price though - 12 serves of soup for 20 cents virtually. I was lucky Mum's freezer didn't have much in it.  I know DD is bringing some frozen prawns for DH for his Christmas present so I had to make sure there was space for that package.

You certainly got a bargain Judy. I went up to the local green grocer about 8am and bought one bag almost full of vegies and fruit and it cost me $50. It's superb quality but oh so expensive this morning. Usually it's not too bad though. I must admit I did pay $5 for one mango and $4 for a punnet of kumatoes. I've never tasted these so thought now was a good time.

Can I suggest swapping the cheeses for 100g of blue brie or similar on occasion? Just stir it through at the end until it melts. I LOVE broccoli and blue cheese soup  :D I'm not crazy about blue cheese, but the extra tang in this kind of soup is divine - the creaminess balances it I think.

I made this today, so easy and creamy, we really liked it.  At the end I just added a couple of glugs of extra milk, but not much at all, and also a tiny amount of sea salt and plenty of freshly cracked black pepper, then whizzed for a few seconds.  Great recipe Judy.  ;D

Made the portuguese loaf to dip into it. 

I guess I could have garnished the top with some parmesan or chopped parsley, but I felt that it didn't need it.  :)

Oh my stars. This is delicious! Thanks JD!!!

Had to get a filling at the dentist this morning & told I can't have anything "solid" for the rest of the day..

So I do a bit of shopping, come home absolutely STARVING!

What to eat!?!.. Whip up some custard with banana - but nah, not a fan.. Ok, let's make pumpkin soup.. or maybe not - no carrot, or onion (what!? Who doesn't have this in their fridge - apparently me! ).... But - hey I've got brocolli, I'll try JD's soup...
