Can't stand for more than a couple of minute recipes

Hi guys,

first and for most this is not Caroline. This is the DH of Caroline posting under her login.
I'm posting this as she has been out of touch for a while and I'm trying to help her get back in touch.

The pregnancy is going well except that a few weeks ago she developed a pregnancy related disability called PGP (basically where your pelvis separates) meaning that you can't move around without a lot of pain.

Caroline stopped logging into the forum as she was frustrated with (herself / condition) for not being able to do anything that was there. The condition has improved slightly that she can now stand for a few minutes.

That's the background and the update so now onto my request...

"Recipes that don't involve standing for more than a few minutes" - we wan't mega simple ones so that if she's in too much pain one evening then I can login, print it off and do it for her. If we just stick with "main family meal", we're keeping breakfasts to cereal and lunches to simple baked pots etc. Don't worry about cost. At the moment I'm buying in huge quantities for ready meals - anything is cheaper than that.

My wife has waxed lyrical about this group over the last year saying that you are signally the most lovely supportive forum she's ever a part of, she refers to you (on a distressingly regular basis ;-) by your login names and so I have a running commentary on most of you.

Poor Caroline!  That's awful.  I hope she gets to feeling better soon.  When is the baby due?

Here's a few easy ones...  and if I were you, I'd google some crockpot recipes too - most of them you just chuck the whole lot in (chop veges in TMX) and turn it on and go away!

Crustless Quiche:
1. Chop on speed 7, 2 seconds:
- 1 clove garlic

2. Add and chop on speed 5 for 3-5 seconds:
- 1 onion, quartered (or half a leek)
- 1 carrot, quartered
- 1 zucchini, quartered
- a few rashers of bacon, rinds pulled off (opt)

3.  Add and stir on reverse speed 2-3 until well mixed:
- 1/2 cup grated cheese (approx)
- approx half a cup frozen corn and/or peas
- 2 cups milk
- 1 Tblspn butter
- 4 eggs
- 75g S.R. flour
- salt & pepper

4. Cook at 180 degrees until set and cooked through.  (Can't remember how long it takes... half to an hour,not sure.)

Hi Caroline and DH - sorry to hear about your problems but nice to see DH stepping in and taking over.  With baby due on 5th Feb, not too long to go now.  Some good hints from Jo above.  It is hard when we don't know what type of food you prefer but bolognaise sauce is easily made in the TMX.  I maintain if you can read DH, you can cook so I think you will cope really well in the kitchen with Caroline supervising  :) :)  It is cold over there so soups, stews etc are the go I would think.  My mince meat curry &  apricot chicken, Master Moderators Rabbit stew (I use chicken thighs) , Mayets Adobo (chicken & Pork) are just a few from Mains which are easily done and any preparation can be done sitting down.  I'm sure you will get lots of ideas from our members and I wish you luck in the kitchen DH.  Go impress that lovely lady of yours :-* :-*

As Judy says, with your current weather soups would really be the go and are very quick and easy.

Good idea Caroline's DH - should get alist together.  Guess we need to remember that you are freezing your .....'s off over there.

Hi Caroline and DH *waves* I was only thinking of you the other day, haven't been around much myself and was wondering how you were going and if there was any news as yet. Hang in there as frustrating as it is, it is nearly over and will be all worth it.

I too am with the crock pot ideas, any prep work can be done quickly in the TM the night before and put in the fridge ready to start cooking the next morning - looks are nothing at the moment as long as it feeds you!

Hi Caroline & DH,  So sorry to hear that you are having problems.  Thank God baby is due to arrive soon.  I also like to ideas of the crockpot recipes.  Great with bubs as you can prepare everything in the morning, flick a switch and dinner is ready for when you need it.

Nice tight bedsheet tied around the pelvis might help a bit - we use that in an emergency for fractures of the pelvis.

Anyway - how about something like twice baked potatoes.  A minute to pop them in the oven, another to scrape out the innards and throw them in the TMX with some green onion, ground up cheese, sour cream, butter, cream - maybe a bit of steamed broccoli.  Back in the shells, back in the oven until brown.  Freeze well too.

Perhaps some all in one recipes like Baf65's chicken and the tomato meatballs. (hope they haven't already been mentioned).

Oh dear - so sorry to hear your down CarolineW - I know just how bad that pelvis thing is!!
CarolineW DH here is a super easy meal for you to put on for CarolineW -
Pasta E Fagioli
1 small chilli
1 small onion
1 clove of garlic
50g olive oil
1 celery stalk with leaves
2 cans borlotti beans
2 tomatoes
2 tbs vege stock
900g water
300g Macaroni
Chop chilli, onion and garlic for 5 seconds on speed 7.
Scrape down.
Add oil and saute for 2 mins at 100oC on speed 1.
Add celery, 1 can of beans, tomatoes and stock then pulverise for 15- seconds on speed 6.
Add water and cook for 10min at 100oC on speed 1.
Add pasta and second can of beans then Cook for 10 min at 100oC on  :-:  ^^
Serve with Parmesan cheese sprinkled over top.
(If your a man that needs meat otherwise it's just not a meal add bacon when adding the onion) ;) Goodluck!

Caroline's DH,  how about fried rice,   make and eat first night and reheat and have with chicken or steak the next.   Hope all goes well with C and baby.     The risotto in the EDC book is O.K if you add a few extra bits.

All my best to Caroline, I am sorry that she is having to go through this now and still a few weeks to go. Anyway, I can't really think of anything, I am sorry to say but thought that "Isi's oven pasta" would be brilliant as you just put it all in one pan and place it in the oven and forget about it. http://www.forumthermomix.com/index.php?topic=2708.0 this is the one I mean.

This really is Caroline this time - having been instructed by DH (aka Oliver) to log on and see if there were any replies.

There are some great ideas here, everyone, I really appreciate it.  The printer is busy at the moment, then I'll make up a shopping list to  order online and be delivered (love the fact that supermarkets over here deliver now).

I have everything in stock already to be able to make the crustless quiche, so that's what I'm going to make first.  I'm going to set DH to bulk preparing root veg for me tonight, as it's the washing and peeling before I can even begin the cooking which tends to finish me off before I've begun. 

If we've got the time and energy I'll see if we can't get our heads around organising the kitchen a bit better for this period.  I currently have things (deliberately) set up so that collecting ingredients and implements involves quite a bit of walking.  I have lots of things set up like that, to increase my exercise during the day when doing everyday activities.   That's usually a good idea - but not just at the moment  :D

My pelvis is strapped up with a belt thing now, by the way ChocDoc, and I have crutches, so they're helping me quite a lot.

Like Judy said, it's not long at all now until my due date.  I see the obstetrician tomorrow, so we'll see what he says.  The Bimbette is still making her presence very much felt, and likes to be involved in what's going on.  I think I've got another very active child on the way.  That should make it easier for Esther and bimbette playing together later on, as DD is a very energetic, active girl - and most of her games reflect that.  (She is the only girlie tomboy I've ever known.  When she started school I told her she could join 2 after school activities, but no more.  She chose ballet and football (soccer).  An interesting combination, but one which sums her up perfectly).

Meanwhile, please keep the ideas coming.  With the delivery almost certainly going to be a cesarean, even if the pelvis goes straight back into place there will be a few more challenging weeks ahead.  Never mind, it's all completely worth it and I won't really remember any of this in a few months time.  'Course, I might not really remember what sleep is either ...  ;) :D

Flo Jo's Tuna Casserole

I have to include this seeing as DH is asking for an easy recipe while his wife is "temporarily out of order". We actually won a first class trip to Thailand in a Cornflakes competition - long story, second chance draw....but this recipe probably contributed to our good luck. Our kids love it, quick, cheap, easy and not "fishy". I'm fussy and I would say its quite good for you - but please give feedback for improvement. Not converted as yet for TM because it is very easy otherwise. We make it often. Would say it serves 4 people.

Ingredients:

1 cup cooked rice (leftovers)
1 teaspoon diced onion
1/2 cup grated cheese (prepare in TM)
1 x 425 g tin tuna
1 x 440g creamy asparagus soup (or ref Can the Canned Soups - on this website under Soups)
1 x 150ml tin evaporated milk
1 tablespoon butter
3 cups crushed cornflakes

Method:

Preheat oven to 180 - 200 degrees celcius.
Place rice, onion, cheese, tuna, soup and milk in casserole dish and mix thoroughly.
Stand to one side and prepare topping by melting butter and pouring it on top of cornflakes.
Spread topping on ingredients in casserole dish and cook in a moderate oven for 30-40 minutes.
