So thanks Nay Nay.We added some cocoa (next time I'd dissolve it properly) and DD loved it and told me a couple of times how delicious it was. I made 1 Lt which is too much for us really, so will try a smaller qty next time.
I've made a mocha junket and piled foamed milk on the top - I am not a big fan of sweetened whipped cream - and the foamed or frothed milk is light and airy with a milky taste that complements the mocha.

If you added some lecithin powder it would be even more stable to serve for guests? Not that it needs to stay frothy for long before being devoured.
I have a frothing appliance, (naturally, being an appliance fanatic) called a Froth au Lait Froth 'n Sauce. which turns a very small amount of of milk into a huge amount of foam which is much more stable than steam-frothed milk. I got it after burning my hand on the steam from my old espresso machine.

I have a standing offer for most of my mixer collection and some of the other appliances, from a company that supplies props for movies. I have a huge, vintage stove that I have agreed to sell to them for a proposed film. Some of the stuff is going "home" so to speak because a lot of the stuff I bought at the MGM auction many years ago, was kitchen stuff from the 1930s. Of course, if I fall on hard times, I can always sell the stuff to supplement my pension...
