I just made a new brownie recipe. Healthy compared to most other brownies, will post now :)

Got home from work and DH had already cooked pork ribs for dinner (and some very well washed rice -forgot to set the temp when cooking!) so I made some freezer meals for DS who works long hours. Chicken stroganoff using Chelsea's recipe, Thai chilli chicken and Johnro's gourmet beef casserole. All finished by 9.30pm and for most of the time I was sitting reading whilst thermy did the work.

You're all putting me to shame. I haven't done a lot of cooking, it's just too darn hot!

Today I made a delicious Caramel Banana Upside Down Cake from the latest Donna Hay mag. She calls it Coconut, Palm Sugar and Banana Upside Down Cake, but the hero is the salted caramel. She uses unsalted butter in her recipe, but I used salted as I love the flavour.

Think I'd change the cake part a little. It wasn't outstanding in flavour and I wouldn't put the coconut in next time.
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

Made pasta for lasagna & cheese straws yesterday.

Just updated my blog with my brownie recipe   :) :)

Love it, and reduced amount of sugar, but still so moist and chocolatey.
