It was a big nasty Coles fresh cheap  cook. A real old Hen  is was but when you cook it like I do with the steaming from the inside and the indirect heat from the outside it is perfectly cooked and juicy. Never dry. The Bush Dust just adds  to the flavour of the beer and herbs. Love it. The skin is extra crispy and if you were inclined you could use the juices to make gravy. I am not so inclined. I added some potato salad  and fried zucchini .

I'm hoping to make my fruit mince this weekend sometime...just got to get around to buying a few ingredients.

I agree.  They cake looks delicious.
I haven't started my fruit mince or any other Christmas cooking yet either.

I'm making Espresso Panna cotta from Alyce's book. Hoping that the coffee layer will set. The gelatine is just past its best before date, fingers crossed.

I haven't had a chance to do any cooking yet today, but DH decided to make Xmas pudding - he's a terrific cook but baking/desserts are not his strong point. What a mess!  and I had to come and help about 6 times (whilst cleaning the house) whilst he struggled with string and paper and foil and pressure cooker and trivet and.....

The uncooked mix tasted fantastic and I'm sure it will be a wonderful pudding. At least the pressure cooker means 1 hour not 5+ hours of steaming-  it's 38 degrees in Perth today!

Eventually I'm hoping to make fig and olive crackers to go with the various preserves I've already made so I can give all my staff their presents this week (luckily only 12 of them). I love giving home made things as I think it says "you are special and I went to some effort for you" - a box of choccies is quick and easy but not quite the same somehow - although I'd never say no to a box of choccies, and hampers made of store bought bits and pieces are also lovely as you have still put them all together and thought of the recipient.

Might make some olive tapenade as DH bought an industrial size container of pitted kalamata olives a while ago...
