Julie, I use just the Quicker........ Recipe which has 2 eggs.  I add 3 as my eggs are from our new chooks and are not quite full size.  The extra egg does make a nice cake mix.  The original recipe uses a box of cake mix to which you have to add oil and eggs. I have replaced this with the Quicker.... Recipe.
Hope this helps.

Judy, you are amazing! How lucky your club is to have you and what a generous heart you have.

I laughed at everyone's kind words about my presentation. I just bodgie everything onto the plate but it's always nice to shape the rice (I have a small cup measurement that I use!).

Wow Judy great food, but who gets up at 3am to cook?
I made skinnymixers massaman curry, choc chip macadamia cookies, bread rolls and Mexican beef slice.
Your curry looks good kyton. Is it a hot one?

Thanks girls.  I only got up that early because I was wide awake Kimmy, rather than laying there thinking of what I had to do it was more productive getting up and doing it.

We're only a small club, just 22 members now but for birthday parties they invite guests such as the Mayor and some of his staff, our  local member of parliament and 2 people from each other Probus club in the area.  Club members are  all asked to bring both a savoury and sweet plate.  I hope I haven't done too much!

I should think everyone will be wishing you had done more, Judy, everything looks so appetising and delicious.  I can see your plates being the first to be emptied!  What a wonderful spread you have put together - wish I was there to 'sample' your contribution.  Hope the party goes well.

Yes it does Chookie and thankyou.  :-*  I was a little confused as to whether you make the Quick cake, then add extra eggs, oil etc or like you've cleared up for me, just the Quick cake and nothing added (except the extra egg).

I will make this one when I get back home, DH would enjoy it I think.  :)

Good Julie. I am sure your DH will love it.  Warning, it does make a lot. 8 large serves or 12 small. I forgot to mention that I sprinkle a few cranberries over the apples. Also, this might help. It is nearly cooked when you see little bubbles of the cake pushing up through the topping.
