Just popped a carrot cake in the oven for Mum's birthday tomorrow.  Did all the prep work last night so it was in the oven within 5 minutes this morning.

So far, cookies Nans mince, Swedish light Cheese cake and peppermint crisp ice cream for freezer, roast beef for lunch.,

We have that fruit mince every year Chookie. I think Mum found the original recipe in a New Idea about 50+ years ago. It's great because it has no suet in it. It lasts for over 12 months in the fridge and is delicious with icecream.

The Nigella Fruit cake sounds interesting. I haven't read all of the weekend papers yet.
May all dairy items in your fridge be of questionable vintage.

I started my Christmas baking this weekend. I made my choc Orange biscuits, walnut biscuits and some cranberry and Choc chip shortbread doughs on Saturday, rolled them into sausages and left them in the fridge overnight, and baked them on Sunday. I have also made rosemary salt, Worcestershire sauce, smokey BBQ sauce, and salted caramel fudge. That should do me for now :)

I've attempted to make Tenina's Almond Porridge this morning as per her instructions, but the end result was very thin, not thickened like in her photo.  I cooked for another 10 mins to no avail so have now added a good handful of rolled oats and have put on for another 10 mins.  Hopefully it will thicken up now enough for us to eat.
I've obviously not done something right but I can't see what.  :)

ETA;  The end result was really nice and we loved the nuttiness of it.  Will make again for sure (with the added oats)  ;D

Julie, I can't imagine you doing anything wrong.  Maybe the recipe is wrong.
