I've been on the Taste site too Margaret. I made their Pumpkin Fruit Cake. http://www.taste.com.au/recipes/10484/pumpkin+fruit+cake
It's quite healthy. Only egg whites and no butter or added sugar. It tastes lovely too.

I tried making Danish pastries today. This was my second attempt. Still not completely happy with the results so if anyone has any tips/advice on working with this type of dough (laminating the butter between the dough and then rolling and folding) I would be eternally grateful. My dough kept 'breaking' so the butter would ooze out.

They look delicious MEP. Do you put the butter in as little pieces or one big, flat piece?  The last class I went to he said to bang it out thinly and put it as one big, thin piece onto a third of the dough. We also refrigerated the dough between each few roll outs too as the butter started melting.

The pumpking fruit cake sounds nice Cookie.   Sorry I can't help with the danish pastry MEP.

I've made a tea cake for morning tea and trying something different with a loaf of bread, nothing too hard just thought it was time I tried a mix of different flour.

The pastries look delicious MEP, I'm a sucker for Danish pastries.  Cookie's tip sounds good, having done a class recently was very timely to be able to pass on this advice to you.

Yes Cookie, the butter was incorporated into the dough in one big flat slab - 2/3 the size of the dough. I also refrigerated the dough wrapped in plastic for an hour between each roll and fold. I think maybe I rolled the dough out too thin and didn't use enough flour on the countertop so it stuck.

I have exactly the same problems. At the class I attended we did it all on the bench and it was stainless steel, so it kept cool. At home I use a silpat.
I'm sure they taste delicious, they certainly look it.

Made some iced donuts from the latest better homes and gardens magazine yesterday they didn't last long

The kids loved them but the actual tray isn't that good ( first lot were fine, second not so good ) the one I bought from big w is much better and I'll use that when we move back home I didn't bring it with me. I'm certainly going to try the sticky date ones too actually lots of nice recipes in the little book that comes with it.
Edited to add the second batch stuck in the tin still tasted good though

I made a turkey drumstick & celeriac SC casserole today and when a friend gave me a lovely fresh lamb's fry I cooked that with bacon and onions.  It was the nicest lamb's fry I've ever worked with.

Erk! I'm sorry Judy, I had to look away. I cannot stand lamb's fry. Mum used to make it with bacon and onions when Dad killed a sheep and the fry was good. I love the smell but can't stand the texture. I'd happily eat the bacon, onions and gravy though.
