Moscato, once known as "muscatel" here in the US, is a great ingredient in dressings for fruit salads.  It enhances the flavor of the fruits.

I can't use it "raw" because of my allergy to alcohol esthers but I do simmer it over a low heat for an extended period until it reduces by half and is like a thin syrup.

It also make an absolutely beautiful vinegar.   If you have a natural vinegar, that contains the "mother"  add 1/4 cup to the moscato, put it in a jar, covered with fine cheesecloth or nylon and set it in a dark cupboard or pantry and don't disturb it for six weeks.  That's about how long it takes the live "mother" to convert the wine.
Taste it and if sufficiently vinegary, start using it or leave it to develop more - at three months you can strain out the mother or just add more.
My vinegar crocks have a spigot at the bottom so I can draw off what I want to use and leave the mother undisturbed.  I add fresh wine to the top.  I have white wine, red wine and rosé in big crocks.

You guys are amazing - I really need to lift my game!

Tonight I just wanted comfort food with little in the pantry - so I made the cheese bechamel sauce (with more cheese!) and then added some tuna and corn.  In making the bechamel sauce I added some of the 'juice' from the can of corn and the can of tuna then topped the liquid up to 500g as it said in the recipe - and it was wonderful.  Just right for the night before going back to work. :)

Today I cooked for the first time since last Thursday - had a lovely break over Easter.
Made Chicken & Almonds (posted recipe) for lunch, Thermomixer's Cauliflower & Almond soup for tea and have the MWOC rice pudding on the go at the moment.

We're having Shepherds Pie tonight as it has actually rained. It's not cold but we can pretend it is winter. I've just taken the last batch of $250 biscuits out of the oven. I love the raw mix. ;)

Mushroom sauce, mushroom soup and probably more mushroom sauce tonight and tomorrow as we love it on our meat in winter. Bought a 4kg box yesterday for $8.00  :D :D


Have been out for dinner as it is the seconds son's 18th birthday today  :D I suddenly feel old, having two kids that are legally old enough to vote, drink etc  :o :o

I'm making fresh pasta with a creamy garlic prawn sauce when I get home today as well as some pumpkin soup  and crunchy multi-grain rolls to have with it.

For lunch today I made spring rolls using Chookie's chow mein recipe (had a pack in the freezer) and some of my Mum's mock fish patties.  All fried so not the healthiest of lunches but delicious for a change from healthy food.
