 :) Yesterday I made:
pumpkin scones, carrot and nut cake, with cream cheese frosting, boiled eggs, veges to go with rissoles for dinner.
Today more baking, biscuits, bosten bread, bread for the week.

Made the Nico Moretti coconut cake recipe doubled which Judy posted (printed it but cannot find the thread on the forum) - iced with an AWW coconut ice frosting.  Mixed all ingredients in TMX speed 5 - 15 sec - really tastes like coconut ice.  I have cheated and used the pic from the site so as to tempt you, as piece of cake looks so much better than the whole cake prior to cutting - DH is taking the cake to work tomorrow, but the left over icing tastes gooooood!!!!

I haven't cooked all weekend as we have eaten out both days so it is not surprising that I found myself in the kitchen at 8.30pm making a pot of creamy celery & potato soup and some soffritto to use up my head of celery.  All gone and I still had other recipes I wanted to try  :-))

Thanks Judy I found the thread and have modified my post to include the hyperlink, then realised that the hard work had been done - you are a champion!!!!!  :)  :) BTW CC the frosting is divine if you hadn't already gathered that from my above ravings!!!!!  :D  :D

Here 'tis Yvette with the converted recipe!. This cake appears much moister than the one which DH took to work - reports back from his staff at morning tea supported that last night's cake was in fact drier, therefore preferable for packaged lunches.
