If I remember correctly ILB, a while back you had a sick friend and helped her out with some cooking too so it must be the TMX that makes us all so helpful to those around us.  :-* :-* :-*

It must be  ;) ;D or at least makes it possible by whipping meals and snacks up so quickly and effortlessly, so we're not left exhausted with a bench covered in washing up afterwards  :o :o  ;D ;D

I have 2 items in my kitchen that I would be hard pressed to give up these days - my TMX and my dishwasher  ;) ;) ;) Both are relatively new in my life but they are the first things I would not want to lose now.

Tonight for tea I converted an apricot chicken recipe from a Family Circle recipe book and it was yummo!!! Served with mashed potatoes and steamed vegies.  When I first got my TMX I tried the apricot chicken risotto from the ECB but didn't like it (maybe I just don't like risotto) even though I have always liked the old-fashioned, easy apricot chicken recipes around. Hope you try it - I'm pretty sure the kids will love it too.

We had a very tasty tea tonight.  Chicken, leek and corn pie from the Budget Busters booklet and then Sheree's white choc risotto for dessert.  The pie was a great family meal, so easy and tasty.  I was surprised that the kids liked it so much as the leek is a very prominent flavour.  The risotto was a huge hit - just heavenly served with some berries!!!  :D :D :D

Hi all
today we have made porridge, crumpets for lunch and pizza dough for tea.  Oh and some strawberry sorbet with some cream.  Am about to rewhip some mango icecream from last night.

Chelsea - where is that white choc risotto recipe from? Ignore that, found it.  I was looking for a yummy dessert for my Mum's birthday, this might be the answer!

 I have the pie planned for next week, glad to hear it was yum!

The choc risotto is very yummy.  I've been trying to think of a nice way to serve it (and the berries) when we have company.  It tasted divine tonight, but didn't look crash hot.  DS was worried I was serving mashed potatoes for dessert!!  Any ideas anyone??  :)

Maybe in a brandy basket (not sure if that's the right name but with the melted sugar, kind of like a toffee.... does anyone know what I mean???) Was going to suggest in a milk or dark chocolate basket - but that might melt  :o

Great going JD!! I might just have to give that one a go on the weekend and Mum used to always make apricot chicken so I'll give her a copy too.  ;D

Is it sloppy Chelsea? Would it firm up if left to sit a while, whilst still keeping it warm though. If it would hold it's shape you could put it into little ramekins then turn out to make a timbale thingy and serve it with a piece of almond bread and/or some fruit on the side.  Or if it is runny, just serve it in a little ramekin so that it doesn't run all over the plate - that's not a good look for a dessert.  You could decorate the plate with some pureed and strained strawberries, make little dots with thick cream on top then drag a skewer through the dots to make hearts.  Know what I'm talking about?  Or you could squiggle melted chocolate onto the plate and stand the ramekin on top of that.

I haven't made this yet but would it look OK if you put it into "fancy ie martini glasses"to serve?  You could then plave you berries on top and even place a almond tuille or something similar into the top as well.

Love the ideas - thank you!!!

It is the perfect risotto consistency when the cooking time is finished (not sloppy).  It just didn't look overly appealing in a blob with the fruit beside it and I couldn't really think what to do with it.  Needed my forum buddies expertise!!!  ;D

I'm taking it that you eat this one hot - right? Because we would have plenty of leftovers, how is the mixture when it goes cold?  The chocolate would harden again and would have to be reheated wouldn't it? Or can you eat it cold?  Might make this one tonight too - seems to be the current craze  ;D ;D ;D ;D
