I'm having a go at Tenina's chicken stock powder today. Chook carcass, onion & carrots in the oven now. Forgot to get the celery so might have to up the celery seed content to get the flavour.

I made her salted caramel nut brownie the other day, but was a little underwhelmed. I followed the directions to the letter, but it was ever so slightly overcooked (although my oven temp is spot on) and the salted caramel flavour is not really discernible.

Anyone else made it?


I've made this Amanda, and was not that keen on it either.  I found it a bit dry in texture, and whilst it was really sweet, I couldn't really taste the caramel flavour.

Finished the stock powder and am quite happy with it. Great way to use up an old chook, but I struggled not to eat the skin off the chook. That's my favourite bit.

Karen, that's exactly what I found with the brownie - very dry.

Nothing that a bit of added bourbon wouldn't fix  ;) ;) ;D

roast pork for dinner
brownies
muffins :)

I had 4 heads of rather dried out, shrunken garlic that had seen better days (the last of a huge plait of garlic from the farmers market).  Not wanting to waste it, I am making Tenina's confit garlic and garlic oil.  I am hoping that the blanching and the cooking in oil will rehydrate the garlic a bit and be OK.

I believe that The 4Blades and Peta will have the first magazine out very soon, and that there will be another before Christmas. I will be looking at the first one for sure.
May all dairy items in your fridge be of questionable vintage.

I look forward to hearing what you think Cookie. I subscribed to another thermomix digital magazine, but it wasn't for me. I think this new one will be different though.

Today I made zucchini slice, spinach and rice pie from Dinner Spinner and started the custard for strawberry ice cream :)

There are such outstanding TMX cooks here,  why would anyone look elsewhere for inspiration.  ?  Beautiful photos of yummy food.
Today have made Falafel mix, veggies to put in sausage mince, double lot of Cauliflower soup and Malt Biscuits with added Chocolate chips.

Today (so far) Stephanie Alexander's buttermilk pancakes -amazing of course and now churning BZB's Strawberry ice cream. If I have energy left I'll try to make some healthy muffins too.

Our lunch today...EDC  pizzas made with wholemeal flour

 (1) prawns, mushroom, capsicum, cherry tomatoes, onion, pineapple, mozzarella cheese on napolitana sauce (2) butter chicken (3) Hawaiian 😋😋

I made a Brownie, butter cake today. It was a non TMX recipe but I just winged it in the TMX. The texture of the butter cake was wrong but the neighbours and DD's boyfriend said it tasted great. I might look for a TMX brownie and Butter cake and make it again one day as it looks really impressive.

The original recipe looks great Wonder, I wasn't sure what a brownie butter cake was until I saw the picture.  Clear now, just use your favourite brownie recipe on the bottom and find a successful TMX buttercake recipe for the top and Bob's your uncle - perhaps  ;)  The contrast in textures would be nice.

Thanks Uni & BZB, I did enjoy my lunch.  When I showed Geoff what I'd cooked today he couldn't believe I ate all that.  I'm going to write the pulled beef and therefore the subsequent pot pie recipe in a recipe book I'm preparing for my grand-daughter for when she leaves home. I've already promised to buy her a TMX for a wedding present but my book is of non-TMX recipes.  I have plenty of time to fill it, she is only going on 10 at the moment  ;D
