No cooking here today.  The family will be in later to help eat up the left over roast meat, vegs and desserts.

We're having friends over for dinner tonight, so I've been busy today and yesterday.

Baked ciabatta (from What Caroline Cooked), Nico's focaccia and Chookies No Fuss bread as canapé toasts and breadsticks. Only 2 people are coming, so I've gone overboard as usual!

For starters we are having a selection of things - mini pork meatballs in tomato sauce, mushroom arancini with Nico's saffron aioli, baked artichoke dip, Isi's crispy olives and other anti-pasta type things. 

For mains it Nico's spinach & ricotta gnudi with ragu di pomodoro, Nico's bresaola parmigiana and rocket salad, another salad (with Teninas honey mustard dressing) and grilled ciabatta.

For dessert it's Farfallina's chocolate soufflés with salted caramel ice-cream and/or vanilla ice-cream.  I hope our friends are hungry!!

I've made a Classic loaf today and all the elements to put together a Hazelnut and Raspberry Meringue cake for DD's birthday. I'm hoping it will go together well.

Made the Cypriot grain salad to have with Chicken Thighs baked in AF.
Amanda, is there something special about this Ciabatta recipe you are after?  If not, try my converted Paul Hollywood one.  It is on the Forum and my Blog.
The small Macadamia Honey tarts that I baked for Xmas were a great success.  As someone said, you hesitate to eat a slice but readily eat 2 or more of theses little tarts. The nut mixture made 18 .

Hauled out my pizza oven yesterday (remember them from years gone by) and had pizza for lunch and left overs for tea.  Just finished another summer berry pudding for lunch tomorrow. Trying to decide what to make for tonight - probably a risotto or something that takes little or no effort (boiled eggs and toast for lunch so they are off the list of options for tonight)!!  Too hot to do much cooking today.

As it is heating up, I thought I would make a loaf of bread today.   I wanted something light but with a lot of grain.  I used a mix of par boiled grains and seeds, 150 g to 400 Organic white bakersflour and 3 teaspoons of yeast.
The saucepan contains the seed and grain mix which I will bag and freeze in 100 g lots. The loaf it a funny shape as I used a new oval Cast Iron pot bought at Aldi, $40. In the heat , the dough doubled in 20 minutes.

Friend brought us an Apple and Rhubarb pie.  We will have it today with the last of the Raspberries.
Getting too hot to do any baking.  Might make some Mayo in the TMX.
