The puff isn't as light as my Mum used to make, however she had lovely cold hands and used lard. It is very rich and I would only use if for special occasions. I made a baby apple pie last night with some and it was delicious.
I'm going to make some more butter soon (I picked some cream up cheap yesterday) and make some sweet, short pastry for my fruit mince tarts. I will also make some Naan as we are having Tandoori chicken tonight.

It still looks really good Cookie.  My mum used to make the best shortcrust pastry using lard too, loved her apple pies.

I made Walnut Brittle from the US cookidoo which uses the Sugar Stages mode to cook the caramel.  I chopped my walnuts 2 secs by mistake instead of 1 so they are smaller than the photo on their site, I also toasted them before hand. 

The brittle is delicious, so crispy if that's the right description, it snaps as you bite it without fearing you will break a tooth  ;D
Because it cooks it properly in the bowl you don't need to bake it in the oven, takes all the guess work out of it just pour it over the nuts and leave to cool and it breaks with your fingers.

DH is going to be rapt when he gets up soon in readiness of nightshift, will pack some in his lunchbox. I will make some for little gifts for Christmas, a nice change from the normal peanut or almond.  :D

I had trouble uploading these 2 photos, something about security?  I had to delete my post and try again which worked.  Please let me know if they are acting strange when you view them please and I will remove them.  Not sure what the problem was/is but I'm hoping it doesn't give anyone's viewing a problem.  xx

Just catching up.  Julie your rolls look perfect, as does the brittle.
Cookie, I have never made puff.  Yours look good.
About to make some shortbread.
Mab, if the jam looks like boiling over, turn down to 100.  It will still boil enough to set.  I have been having ‘ boil overs’ with the sausage roll machine.  Makes one hell of a mess. Easier to clean up than the TMX.

That brittle looks delicious JulieO. I’m glad I don’t have a TM 6 or I would be wanting to make this. It would make such a lovely change from hoping you didn’t break a tooth when eating it.

Chookie   the jam was even boiling over when set on 1.  I ended up finishing it off on the stove.  The next day I made another lot of apricot jam with no problems.  No idea why the strawberry jam kept boiling over.

Making shortbread today.  Recipe from one of the original AWW books. The one that RTE featured.
Also a ginger cake for our neighbour. He can’t eat fruit, as in Xmas cakes.
Wholemeal Japanese bread.

Got a bit out of hand.
Used the light Brioche recipe and Cookie Nans mince.  Rolls stuffed with mince and Marzipan, plain rolls to freeze, rolls with mince on top, scrolls with tahini and cinnamon sugar. Wholemeal Japanese milk bread.   From left to right.

Chookie that is quite a batch  of cooking. I will cook my rye SD loaf when it has risen enough and make some fruit mince tarts, as I did the pastry yesterday.
I did make a batch of shortbread with cranberries, pistachios and mandarin zest in on Friday.
