Made custard today for Portuguese Custard Tarts.  I’ve found that it is best if made 1 or 2 days before I make the tarts. I have been having a campaign to make them perfect in the new ovens.
What I do is make custard beforehand.  Also do the pastry the night before and cover with Glad wrap and put in the fridge.  In the morning of when I want the tarts, I remove both from fridge . Switch on both oven to 200 and the grill in the other oven. Fill the cases and pop into oven to bake. This cooks the base and custard but does give the brown spots on the custard.  I then pop them under the grill and watch like a hawk and remove when satisfied. They just slide out of the muffin tins after 5 minutes.

Judy, about the same as in the old oven, perhaps a little better cooked on the base and easier to remove from the tin. I go to so much trouble as I give most away.
We are having visitors for afternoon tea on Wednesday. I thought I would make Mabs Ginger fluff sponge. I should practice first.

Thanks for that link Sue. I'm going to give them a try. It's lovely to hear from you again.
I made some muesli bars from SBS food today. They are from Poh I think. It's just seeds and nuts and held together with honey and then baked. Very nice. I may have had a couple of small pieces.

I was a bit ambitious cookie, both items too gluggy for me so they’re in the freezer for the kids.
Love the look of your muesli bar and that pretty plate, a cook has to test her recipes.

I recently saw a nice crunchy granola recipe and had an idea that if I turned it into a powder I could use it in my breakfast smoothie.  My current diatician’s smoothie is sustagen, oats, banana and peanut butter so I though the addition of various dried fruit and different nuts would be a change.  I went online and started looking at different granola recipes and low and behold Jamie Oliver had already though of my idea https://www.jamieoliver.com/recipes/fruit-recipes/awesome-granola-dust/
I bought all the ingredients and made half a batch as with my luck I wouldn’t like it.  I was a little disappointed in the taste (the one I make is tastier) but there is more goodness in it so I now alternate the 2 recipes.  Jamie has ideas on how to use the powder so I tried the pancakes but no thanks, ate 1 and threw the rest of the mixture out.

Well I guess I could add a tablespoon or two of the granola dust to the dietician’s smoothie but it would then need more liquid otherwise I’d have to eat it with a spoon and it might be too gluggy cookie. I’ll try it when I make up tonight’s mix for tomorrow’s breakfast. I like to soak both the recipes overnight otherwise even the blitzing doesn’t break down the oats component enough, I want to be able to drink it. Will let you know how it goes, thanks cookie.
