I’ve made some baguettes and a Seeded Bread loaf from Cookidoo. The baguettes recipe is from Bakewithjack.

Thank you ladies for you kind thoughts, I'm starting to feel a bit better now.
Cookie, your bread and baguettes look good.
Yesterday I made another Christmas pudding, this one is for a friend who gives me lots of vegetables from her garden.
Today I tried out a vegan Panacotta recipe from Cookidoo.  I didn't use the raspberry sauce just poured a bit of jam over it as it was only a trial run.   It looks a bit dark so next time I will use white sugar and not raw sugar and vanilla sugar to see if it will look a bit lighter.  Both DH and DS said it tastes nice

That’s a perfect looking pudding Margaret, you’ve certainly got them down pat. Do you have vegan family members as far as the Panacotta  goes?  I thought it was strange that a recipe would ask to use darker sugar as it would alter the colour we are used to with our Panacottas. The difference in the next one will be interesting.

Yes Judy one of our GD is vegan.  These are a trial run for her Christmas dessert to go with the vegan meringue I made a week ago.  I've yet to decide on her main course, possibly a vegetable type wellington.

That sounds nice, anything in pastry tastes better. Obviously the meringue freezes well.

Your pudding looks delicious Mab. I’ve made a mushroom Wellington that was very nice. You use a large mushroom and pop bits in the hollow then wrap it in pastry.

I have been trying to come up with something different for my vegan contribution to our Xmas this year ... I have done the same thing for the past 2 - 3 years so I think a change is in store.  I recently tried a coconut oil pastry which turned out much better than anticipated, so perhaps a Wellington is a possibility.

That sounds interesting Marina. I have heard of olive oil pastry but not that.

I need to make some biscuits. I made some yesterday, but we had visitors just as they came out of the oven and there weren't many left.

Not actually cooking but I did prepare RTE garlic crack bread for the freezer to give to the kids as it’s always been on my to-do list. Cookie, you made it recently - how was it?  So fiddly to make but I got there eventually and my DD was pretty pleased when I sent her a photo of what I have for her.  https://www.recipetineats.com/cheese-garlic-crack-bread-pull-apart-bread/

I made that a few times too, Judy, and it was a big hit.  Unfortunately, DH has now become lactose intolerant and I cannot find a decent melty cheese.

Thanks Marina, that’s nice to know. What a pity it’s off the menu for you now.
