Made these last night to feed 7 adults and two kids. I upped the chicken breasts to 4 and swapped the olives for 250g sliced mushrooms. This made enough filling for 16 tortillas (shop bought normal size). Served them along side more sour cream, home made guacamole and home made hot salsa. The whole meal was a huge hit with all the adults and the 6yr olds. It was a perfect amount with one left over for my lunch today
Will definitely make these again.
Oh also a great make ahead dish. I made them first thing in the morning, popped them in the fridge for the day then reheated in the oven until hot before serving.
