Sweet Potato & Zucchini Fritters

Name of Recipe: Sweet Potato & Zucchini Fritters
Number of People: This recipe makes 6 patties but you can easily double it
Ingredients:
250g sweet potatoes, peeled and cut into chunks
1 zucchini, trimmed and cut into chunks
1 egg
40g plain flour
S & P to taste
Oil for shallow frying

Preparation:
Place the sweet potato chunks into the TM bowl and chop for 2 sec/speed 7. Scrape down the sides with a spatula.
Add the zucchini and chop for a further 2 sec/speed 7.
Place the mixture into a sieve and press out as much liquid as possible.
Return the mixture to the bowl, add the egg, flour, S & P.
Mix 5 sec/speed 4.
Heat some oil in a heavy based frying pan and drop heaped tablespoonsful into the pan, pressing it into the shape of a patty.
Cook 3 minutes on each side.  
Drain on paper towel and serve with tossed salad.

Tips/Hints:


Millipede: I made these last night thinking my kids would gobble them up due to the sweetness of the sweet potato. But they decided they were too runny   Mind you, I didnt squeeze through a sieve, I just squeezed batches of the mixture in my hands. I think next time I'd better remove the juice more thoroughly LOL, and adjust the flour for the batch rather than just going strictly by the recipe (which is probably what Judy intended!).
Oh as deference to my DH's low saturated-fat diet I used 2 egg whites instead of 1 whole egg. 
I made this recipe along with the middle eastern cauli frtters and presented them on a bed of vegies (potato/carrot, diced, parboiled and then sauteed with mustard seeds). I served it up with some bread.

DM: Made this for lunch today. Yum!

Kulsha: I made these today as sweet potato fritters (minus zucchini so the mixture didn't need squeezing). I used 400g sweet potato, increased it to 2 eggs, added chopped fresh parsley, 3 chopped lean bacon (for DH) and a teaspoon of ground cumin. Really nice, I like that the flour is kept to a minimum so they don't taste doughy.

DD: I made thses for dinner tonight.  DW and I really liked the flavour. I didn't get enough moisture out of the mix so they were a bit wetter than I would have liked.  I added haloumi cheese when I chopped the sweet potato.

HBell:  make a variation of these before I got my TC - grating was a pain! Keen to give it a go again now!
When I used to eat dairy, we'd mix sweet Chilli sauce and sour cream - so delicious!

Julia83C: Made these tonight to accompany my pumpkin/potato/carrot/coconut soup!
I used 600g sweet potato / 1 medium zucchini / 2 eggs / 100g spelt flour. Yum!!

NF: These were a huge flop for me  I drained the liquid out and they just fell apart. Couldn't even turn them.

I ended up adding an extra egg and some more flour and making it into a slice. It's very delicious.  Just didn't work for me as fritters.

They look great JD! Clever you ;D. What did your DH think of them?
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

Thanks MJ.  DH likes any vegie patty.  He is not a sandwich for lunch type of person so generally we have a cooked lunch and something easy like this for tea. There are so many combinations you can use for vegetable patties.
