I meant to get back on this soup Jo, DH would choose this for his meal when I gave him options of left overs last week so he obviously didn't notice it had a completely different taste to our chicken soup.  It seemed to improve with age too.

Came home to a clean house again today - Grandma gets the kids all working!  Yippee!!

Made this today but without the chicken and with liquid chicken stock and it was really yummy. Definitely on the family list.

Highly recommend and without the chicken a very budget conscious meal (the stock was from a chicken we had on Thursday).

ETA - I also didn't put the peas in as I don't like peas in soup, lol.

Yes. I make stock from every chicken we have. So put the bones etc in the basket with garlic, peppercorns, celery (heads if I have them), onion, sometimes other stuff and 1lt of water and cook for 35 mins.

And as I had the bargain of the year on Thursday where I got 2 mispriced BBQ chickens for a grand total of 30c!! It was very cheap stock too, lol.

Watched Nigella on one of her TV programmes when she said that she even used the chicken bones from everyones plate (to make stock) after they had eaten their roast chicken dinner.I'm never quite that desperate.

Do you guys boil the skin too and what if there is stuffing in there (on bought ones they all seem to be stuffed).

Good idea for a budget meal, Zan! 

I don't ever add the stuffing to the stock - I think it would make it all cloudy and thick (and I don't know what's in it - could be scary - I don't even eat it!  )

My DH likes to pick chicken bones until they are bare. I don't suppose I could really use them for stock after that................or could I?  What do you think please? Would it be ok if it was only for family?
