I pull my chicken apart and throw in the wing tips and parsons nose and only leave the bones in the drumsticks and wings when I serve up - could you do that for your dh and just give him those pieces? My carcass is fairly clean but not picked at clean so not sure how it would go if they were all picked over.

Stuffing, yes I take it out of store bought chickens.

My DH likes to pick chicken bones until they are bare. I don't suppose I could really use them for stock after that................or could I?  What do you think please? Would it be ok if it was only for family?

A better way might be to buy chicken frames and used that for stock but it is nice sometimes just to buy a whole nice chicken and sacrifice it to a good stock. My dog Jaxon loves it when mummy does this.

Well ok I cooked this up tonight for the family and it was an absolute hit. DD1 took one mouthful and said "Oh this is Yum".

I think its the best TM recipe I have had in a LONG time :)

Oh and I only used chicken stock powder (well it was the massel 'gourmet' one) I can only imagine how much better it will taste with proper chicken stock.

Funny thing though.... I served it up and then said... "hmmm next time I might chuck in some peas or beans in it to add some colour". Its only replying to this thread that I realised it was part of the recipe and I forgot to transcribe that bit  :-))

DD made this over the weekend, and we enjoyed it alot. It was different with the rice in it, as you could definitely taste it but it was well balanced with the other ingredients also. Thanks QC  ;D

I made this for the second time & I just love it!! I made it with the left overs of a cooked chook (about 1/3 to 1/2 of a chook). Will use the carcass to make chicken stock (first attempt). Thanks for this one - it will definatley be a regular in our house.

Jo - thank you so much for a great tasty recipe. I made this for lunch and it filled the spot as it's a cold and miserable day in Melbourne today. Yum!

Could I ask - if I need to get the chicken pieces smaller would I use a higher speed in step 4 when cooking the chicken? I love the texture of the soup but just need to get the chicken smaller and don't want to puree it smooth at the end. Not sure the best way to do it and at what step.

Hi allthingscraft - I think if you don't put the blades on reverse in step 5 the chicken would be chopped finer - or of course you could chop it smaller when you're cubing it... But I would put it on reverse once you add the peas so they don't get squished! :)

Thanks Jo have added the notes to try next time. DH loved the soup last night when he tried it. This will be a regular.
