I know it's hard to revisit a recipe that has failed Molly but have another go because this one works for all of us. It is so simple to do. Just write down exactly what quantities you are using, your method, the exact name of each ingredient you are using (eg Wallaby bread flour), times etc as you do it and if it doesn't work next time, post it and we will see if we can pick where you went wrong.

I'd definitely try again Molly.
I'd never made bread before owing my Thermomix. My first few attempts to make bread (using recipes from the EDC or from here) were really bad. Then I tried this recipe and actually made bread that looked like and tasted like bread! I was so pleased
Now I make bread every weekend and have tried lots of different sorts of bread and recipes, all with success. I think you just need one good loaf to get you started

Okay, I"ll give it a go.... Before I do though.... should I be using 'strong' flour? I used the Lighthouse bread and pizza flour.

Well, that is a bread flour Molly so I can't see anything wrong with that. Just a thought, how warm is the water you are using - if it is too hot you will kill the yeast.

A quickie before I cook these rolls (they're onthe tray, rising): SHoudl I put a dish of water in the oven? I've heard it's 'the thing to do' in bread making.

I have also heard this too, I don't do it though lol
I do shake some citric acid in to help it prove (just for future batches

the pot of water is just to create a nice crust...creates humidity in the oven which is good for baking bread

OKay, these ones worked out much better. BUT... still not as light as it could be. I'm going to try plain flour next... and then I'll give it up.

Using this recipe for my first attempt at TMX bread - I've used malted flour in the main mixed with some white bread flour (about 350g malted to 150g white). On its first rise now - fingers crossed!

brunette, will be interested to know how this turns out, and what type of malted flour you have used. The loaf I made with commercial malted grain was !00g to 420g white. Next time i will try 50g of Malted. Dh loved it , but I found it a bit strong, although very nice toasted with Honey.

I made this recipe into a loaf, Every thing was looking really good until I put the dough into the tin to rise after a double rise before that. The poor dough looked quiet small in my huge bread tin. It only seemed to rise to half the size of the tin. I baked the bread and it tasted fine but looked a little small. I think that my bread tin is just too big for the amount of dough. I brought myself a new tin today so should be much better. Will try again.
