what is the max kg for the TM? I have had to replace 2 x bowls because of a "worn thread". I would be very hesitant to load up but am interested in knowing how you are going with the heavier mix. perhaps the heavier mix is ok provided you are only kneading and not blitzing?

CP,  I only really feel happy using up to 600g of flour.  I have used 750g with the sour dough but this happens when I am playing around with the mixture.  If I want more dough, i make 2 lots.

Those wilton heart shaped tins from target, made beautiful dinner rolls using your recipe



I placed a heavy tray on top of the 2 tins  (spraying base of tray with canola spray.......your tip  ;)), cooking the same time listed.

Maddy,  these look sooooooo good.   Have you considered cutting out the centers and using the shell as a pie case.?  I did this with round rolls during the week and filled them with curry mince.

No I hadn't considered that......but I will now  :P  Fabulous  idea!

When we put all the food out on the table at the bbq, hubby came over to me and said "Someone out smarted you....look at those rolls"..... LOL

Just made these rolls.

Did 1 rise until doubled or more.

Rolled out in to ball shapes, slashed, brushed wih oil. Straight into my cold oven, turned on and cooked for 20 mins, perfect. Used my bread roll pan, perfect crispy rolls. My oven has rapid heat up so probably took 1 min or less to get to temp,

My solution for quick 1 rise rols in the week.

Yesteray i made this as a loaf, did 2 rises and it wasnt very tall. I used a large loaf tin.

I also bought a whte loaf from a very good bakery, the bought loaf was twice the height and much lighter in taste.

How can I get a taller lighter loaf.

The rolls are perfect, just not as happy with the loaf.

The commercial bread is full of air ,water and yeast.  All cheaper than flour. 

The loaf should be similar to the rolls,  make sure you do a full double rise each time,
Spray the loaf with water for 2nd. rise
Put dish with water into bottom of oven
Best placed in HOT oven.   The cold oven ,  I don't recommend this for loaf.
