Broccoli Soup

Broccoli Soup
Serves 4 - 6
Ingredients:
1 onion
1-2 cloves garlic
10 - 20g olive oil or butter
400g broccoli including stalks, roughly chopped
600g water
1 tbs veg stock contentrate
2 potatoes (250g) cubed
Cream (to taste)
S&P to taste
Preparation:
1. Chop onion and garlic for 10 seconds speed 7
2. Add oil/butter and saute for 3 min 100 degrees speed 4
3. Add broccoli and chop for 10 seconds on speed 5
4. Add water, stock, potatoes and cook for 15 mins on speed 1, 100 degrees
5. Add cream and blitz from speed 1 to speed 8 for 30 seconds
Tips/Hints:
I think by not chopping the potatoes in the TM at the start it doesn't make the soup overly starchy, but it is nice and thick.
Note - You can use the same method with zucchini too. If you want to make it a bit more special add 1/2 or 1/4 tsp pesto into each bowl, on a dollop of yogurt.

Uni - I've been adding yogurt (TM yogurt) to my soups lately instead of cream or a little cube of blue vein cheese, yum.
Rara1 - Added 700g of broccoli, 1 extra potato and 800g water. The jug was filled to the max.
MF - Added some home made pesto and grated Parmesan.
Katj - I used Light & Creamy evaporated milk in place of cream. Perfect!
Anniebygaslight - We love broccoli soup with Stilton.
Jeninwa - I used cauliflower, broccoli and about 100g of zucchini. Everyone loved it.

We really enjoy broccoli soup, especially when our neighbour brings us beautiful fresh broccoli. A bowl for him is a cheap price for it.

does this really need the cream in it to taste alright? I only ask because my hubby and I are looking for low fat soups to kick start our "healthy eating" and were hoping this could be on the menu?

I made this tonight for dinner. Let me start by saying I don't actually like broccoli, but I
I eat it because its good for me. Well that was until now. I followed the recipe with no changes and it was delish, definitely a keeper. thanks hopeful.

Made this late this afternoon after reading the reviews as I had unused broccoli in the fridge, . Delicious!
Added some home made pesto and grated Parmesan and will definately make it again. Yummy

I'm not crazy about broccoli either - but I have a couple of small heads of it in the fridge - this sounds a good way to use them up before they disappear to the compost heap
MF - the addition of the pesto and parmesan sounds really good!
